Make Something Monday ... Spicy Nacho Bake

The other day I made these amazing nachos when we had friends over for dinner. They were a huge hit and were super easy to make. I found the recipe on Taste of Home (thankfully I get an email with recipes once a week from them and this was a featured recipe). My husband even got a picture of his best friend sneaking a snack before he had time to dish them up. Enjoy my darlings =D.


P.S. Did I mention they won a blue ribbon ... LOL as usual I can't take the credit on a recipe but I sure love making them! People like Chef E can make these things up out of their heads and I'm the person that loves taking their recipes and making them. With out more words which I'm not known for (yup not sarcasm either)!


Brown the meat
Can of Tomatoes (yup not a store brand, this was cheaper)
Can of Chili Beans
Can of corn
Add can of Black Beans
Add Tomato Sauce (yup it was the sale one)
Taco Seasoning
Add the onions
Yum ready to go in the pan.
Layer of chips, layer of meat and top with chips
Well I'm not the best with layers but here is my version.
Yum out of the oven
Now isn't that pretty plate
well maybe not gorgeous but it sure taste good!

Editor Note this recipe was for 2 casseroles so I made it for just one casserole.

Spicy Nacho Bake

Ingredients:
1 pound ground beef
1 large onion, chopped
1 large green pepper, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (15-1/2 ounces) hot chili beans
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1 envelope taco seasoning
1 package (13 ounces) spicy nacho tortilla chips
2 cups shredded cheddar cheese

Directions: In a Dutch oven or large kettle, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). In each a greased 13-in. x 9-in. baking dish, layer chips and 1/2 meat mixture. Repeat layers. Top each with a layer of chips and cheese. Bake, uncovered, at 350° for 20-25 minutes or until golden brown. Yield: 1 casseroles

  2. Cammie you sound just like hubby he grew up in CA and LOVES all mexian. Me not so much, but nacho are so ok by me. Especially with all this extra stuff :).
