When you want to Crock it out (Crock Pot Style)

Manic Monday Meals-1I love the crock pot and need to get back into the groove of using it because it helps out to put it in there and let it do it’s thing then I can run to the gym and have dinner ready to go when I come home.  I made a weight watcher taco soup (with a few modifications, due to what I had in the house) and a cornbread muffin that also was very yummy!

Here is the Weight Watcher Taco Soup original recipe.  I didn’t have kidney beans so I used black beans.  Only 1 can of pinto so I slipped in a white bean sub. And extra lean ground beef.

  9. I bought my crockpot at a garage sale 2 years ago for 50 cents. It is wonderful, especially for beans. I cooked great white northern beans in turkey broth from Christmas (I had frozen it) with celery, carrots, onions, garlic, sage, basil and smoked sausage (Kielbasa).
I make a lot and portion it into several containers.
We will be having that with brown rice, focaccia, romaine lettuce salad with a simple vinaigrette.
To you and all I say bon appetit.
