Things I've Learned this Week

Really sometimes you need just a kick to reality, yup my life often does this for me!

A) When going to a birthday party for your husbands distant cousin. Make sure you call and ask an age. You may think they only have one kid, but surprise her man has a son from a previous relationship. Yup that bubble bath set you bought for the 2 year old not so Cool for the 8 YEAR OLD!!! {insert head slap}

B) When a friend calls turn off the Halmark Channel. Tears and unbearable talking making you friend go into a panic thinking the "he left" (the man on the TV of course) is not the he in your life. And her rushing to your house in a panic can cause for some quick explaining!

C) When you work from home or "home during the day" your the target for projects others think will be so easy for you put in the mix of your day. Also not being able to say no can cause problems too. Somehow you'll get yourself volunteered to help with the church newsletter each month. Oh no worries I can whip that out each month for you! Oh please don't make me come in with a 2 year old for 4 hours! Let me take it home, I promise I'll bring it back the next day!

D) When my husband says hun I'll drop off your car and walk to work, you take the kids to daycare. Realize that the same sarcasm that you use everyday your husband is using now on you and you're getting sucked into doing double duty of dropping the kids off coming back home to only find out that you also will be taking him to drop the car of and drop him off at work. Crap how did I get dupped by my own trick?

E) You can always ask for a discount and when you have a cold and use your sexy sick husky voice you can get $100 off your tires! Then when you walk in mind you not knowing you were taking your husband there with your semi combed hair and no make up you can shock the heck out of them. Then bust out with your $20 off an oil change also you can just see the look on there face of really this is the girl? Don't worry they get so busy and mess up and do a alignment on your car instead of the other Kia Sorento yup $185 improvement for FREE. Let's recap that would $100 of tires, $20 of Oil Change and $185 alignment for FREE. Yup you added that right $305 saved that day, take that for no hair done and make up day!

F) Stop listening the Christmas Miracles that the radio show is doing, when they come on turn the station. Sitting in your car crying at a stop light makes you look a little on the crazy side that and talking to the radio about what happened also can strike people as a nutty person in the car next to them and they then feel the need to speed up and get as far away from you as possible!

Phew I think that is enough for one Christmas Eve! I'm off to work a bit then clean the house and get the last presents wrapped and figure out what I'm missing so I can run to the store like a made woman who has watched Hallmark all day and is now crying to the Christmas Station. Oh lord be with me, the people around me are loosing it they just don't get it! :)

It's Christmas Time you mean I have to make Breakfast too?

Oh come on you think I wouldn't give you some breakfast recipes for Christmas morning. Oh yea of little faith! My boys are picky eaters and breakfast sometimes can be a pain in the behind! So when you're fed up with making eggs every morning like me try out a few of these pretty cool recipes. Not only do they look cool they are a good breakfast to get the kids and you of course you have to taste and have one also! A good breakfast can do wonders!

I start us off with one of my favorite characters this time of year. Yes love him on TV and in books NOT in my yard. Well that is I'm not a fan of snow, but if it does happen of course I'll have one in my front yard. I of course would prefer this inside my house!

Frosty the Snow Pancake

Ingredients

  • 3 Aunt Jemima Frozen Pancakes
  • Cool Whip
  • 5 pieces of black licorice
  • 2 green M&M’s
  • 3 red M&M’s
  • 1 orange gumdrop
  • 5 mini chocolate chips
  • Circle-shaped cookie cutter

Directions

  1. Heat up 3Aunt Jemima Frozen Pancakes
  2. Use a cookie cutter to cut one pancake into a smaller circle for the snowman’s head
  3. Cut another pancake into a hat shape
  4. Place the third pancake as the body of the snowman
  5. Spread Cool Whip over the head and body of the snowman
  6. Cut up pieces of black licorice for the hat and arms
  7. Lay the licorice pieces over the hat shaped pancake and place the other pieces on both sides of the large pancake for the arms
  8. Add 2 green M&M’s for the eyes
  9. Add 3 red M&M’s for the buttons going down the middle of the larger pancake
  10. Cut an orange gumdrop in half and lay sticky side down for the nose
  11. Place five mini chocolate chips for the mouth
Since we're all hanging our stockings in the hope for Saint Nick why not a recipe with the same thought?

Stocking Pancake

Ingredients

  • 3 Aunt Jemima Pancakes
  • Strawberries
  • Cool Whip

Directions

  1. Heat up 3 Aunt Jemima Frozen Pancakes
  2. Cut pancakes to make a stocking shape – two big squares and an oval
  3. Slice strawberries and lay over the top of the pancakes, covering them completely
  4. Dab Cool Whip on the top and bottom corners of the stocking
And the one recipe that I just think is too freaking cute! For my turkey lover that always says the pigs are too cute to eat, check this out ... LOL just playing! What a great way to get the kids to important parts of their diet, fruit, nuts and bread. Love a well balanced meal, and you didn't have to go to a high priced restaurant to get a cute pancake. Yup I avoid leaving the house with my kids at all cost .. you know until they are in college ... LOL

Turkey Pancake

Ingredients

  • 2 Aunt Jemima Frozen Pancakes
  • Peanut butter
  • 1 blueberry
  • 1 strawberry
  • 2 almonds
  • 1 large banana

Directions

  1. Heat up 2 Aunt Jemima Frozen Pancakes
  2. Cut 1 pancake into a rectangle to use for the neck and use the remaining piece of the pancake to make a small half circle for the head
  3. On your plate, layout the half circle, rectangle and remaining pancake to create the turkey’s shape
  4. Spread peanut butter over all 3 pieces, covering the entire turkey pancake
  5. Add a blueberry for the eye
  6. Slice up a strawberry for the turkey neck
  7. Place two almonds on the outside of the half circle for the beak
  8. Cut a large banana in half. Take one half and slice it into four pieces lengthwise for the turkey feathers and slice up the other half of banana to use for the legs and feet
Now that I have showed you how to spruce up your Christmas and every morning after that I'm going to go finish up my wrapping and planning what day I'll be making these! Don't Freak I have Party Food Recipes for you!

Vlasic® Pickle are big hit with the boys, I always have to have a jar in the fridge. Really my boys (Rick included will grab a bowl and snack away. But who new you could have a pickle to snack or to spice up your tuna? Well hold on Betsy because this is not your boring pickle recipe. I'm about to blow you mind with some YUMMY recipes that your guest will be so impressed with. I promise you're going to enjoy all of these. Yes I know you're all like me going to run to the store Christmas Eve to get the last minute things for the party so why not try some recipes that are at every boring party people have gone to before! Believe me you're going to get some special treat baskets from your party goers and be the host of the year!

Dirty Pickle Vodka Martini
So Let's start with or drink of the night. Just imagine the looks you'll get when you walk out with a platter of these? First people will give you funny looks they'll curiosity will take over and they will have to check it out. Don't worry they'll be back for another and maybe another! Just remember to take keys away! And now for the recipe:

Ingredients:

8 ounces Vodka (use your favorite)

½ teaspoon dry Vermouth

2 Vlasic® Kosher Dill Pickle Spears

1 tbsp. pickle juice (from the jar)

Directions:

Add ice about halfway up a cocktail shaker. Add vodka, vermouth and pickle juice. Shake well, pour into 2 Martini glasses and garnish with a pickle spear in each glass.

For a yummy sandwich, but one you need napkins on hand for are. Plus check it out save the recipe for Homemade Russian Dressing!


Messy Russian Turkey Sandwich

This is a beautifully flavored sandwich with all the ingredients fusing perfectly together. It is also one of Kevin’s top sellers at his San Diego sports bar, the East Village Tavern & Bowl. The trick is to make the Russian dressing by hand which is super simple and you’re going to learn how to do it right now!

Ingredients:

2 pieces sourdough—or your favorite—bread

4 tbsp. Russian dressing (recipe below)

5 slices turkey

4 slices Applewood smoked bacon

½ avocado, sliced

HOMEMADE RUSSIAN DRESSING:

2 tbsp. mayonnaise

2 tbsp. Vlasic® Dill Relish

2 tbsp. ketchup

*Mix equal parts of the three ingredients together well in a small bowl.

Directions:

Toast your bread and spread on Russian dressing. Place turkey, then bacon, then avocado on one half and make sandwich.

And you all now me and my slow cooker! Yup love it, it's my friend and hasn't done me wrong yet! This will be the next thing I do in my crock pot!

This is the perfect comfort food sandwich for a cold, rainy or snowy day. Use a crock pot or just boil or pan roast it. Remember, pork is all about “slow n’ low.”

Ingredients:

1-3 pounds pork roast, slow-cooked

½ cup honey

2 tablespoons brown sugar

1 tablespoon mustard

½ cup ketchup

2 tablespoons Worcestershire sauce

Salt and pepper to taste

1 pack hamburger buns (use your favorite)

1 jar Vlasic® Pickle Chips

Directions:

In a slow cooker, add pork, honey, brown sugar, mustard, ketchup, Worcestershire sauce, salt and pepper. Cook on low for 4-8 hours. Pull apart with fork and mix well with the remaining sauce. Heat up hamburger buns and split in half. Add Vlasic® pickle chips on top and make sandwich. *Optional: Top with coleslaw or beans.

Turkey Sloppy Joes with Bread & Butter Chips

This is a healthy twist on a classic dish. The smooth texture of the meat and the crunch of the pickle is a match made in sloppy heaven. Makes 4-6 sandwiches

Ingredients:

1 pound ground turkey

1 small yellow onion, diced

1 cup tomato sauce

1/2 cup ketchup

1 tsp., Worcestershire sauce

1 tsp. brown sugar

2 tsp. vinegar

Salt and pepper to taste

1 jar Vlasic® Bread & Butter Chips

1 package hamburger buns (use your favorite)

Optional: Pepper jack cheese

Directions:

In a large skillet over medium heat, add the ground turkey and onions. Stir until browned.

Add tomato sauce, ketchup, Worcestershire sauce, brown sugar, vinegar, salt and pepper. Stir all ingredients together and cook until turkey is done, onions are soft and the sauce is nice and thick. Heat up hamburger buns on grill or in oven. Add turkey mixture on bottom half of bun, 4 Vlasic® Bread & Butter pickle chips and make sandwich. Optional: add cheese.

I'm Blessed and Giving Thanks this Special time of Year!

As many of you have probably guessed by now I love this season, spending time with my family and making treats for others. This year has been a whirl wind of crazy ups and downs and I'm just happy to be so blessed.
Now I usually stay away from politics and religion on here, I have mentioned a few times about a new church I found. So with this being the season and the reason for the holiday I just have to share some things that really have changed my life. I'm a believer everyone to each own, and I hope you don't mind me sharing a few blessings that have come to my life. For a while I was just not feeling up to where I should. One Sunday I got up and went to church, I walked in with tears in my eyes and have gone back every weekend. I finally found something I was missing, now I can't say that going has made all the things fall into place but I really believe that it has opened up doors and lead me to the path I am now.
This year included a cut in hours which lead to a part-time job that I fell in love with. Then when I was laid off this part-time job turned into a full-time job. Who knew these small events could lead me to a place I feel so at home at. Now working at home did cut back on some money coming in during my 60-day trial period but we've made do. It's funny how even when you have to make adjustments being in a happy place can make your world.
Now to prayers that have been answered, I'm not one to ask for much I HATE relying on others. But somethings you just need that extra hand. I can't believe how these prayers where answered. Cole's school helped me with the cost so I could keep him in his class that he so needs with all that attention, my house has been getting a face-lift and then the one prayer that has been hanging over me for months was new tires for my car. I'm a few thousand miles over and was scared to drive anymore. I've been trying to save up money but you know how that goes! Sorry long story! Back to my new job that truly amazed and touched my soul. This week I received a package, I was so excited my boss had sent special gifts for the boys. While opening their gifts I see a card attached with my name. In this card was a Christmas bonus, my prayers for new tires had been answered. I was just so taken back with such kindness and appreciation. Sometimes we just need to put our needs out there in an others hands, in my case it was God in others it may be a friend etc. I just wanted to share from the person that doesn't like to ask for help that sometimes asking for that help will bring you more joy then you have ever expected.
Thank you for the wonderful friends here you are a blessing as well! It's amazing how small turns of events have lead me to where I am here with all of you and in my business and personal life. Thank you for being part of my blessings, I count all of you as them!

New Tires!
Ok I must tell you a story on the tires, really did you think I wouldn't have one? I'm a shopper so I called ever tire company in my town and the town over. I found that quoted me around $490 (4 tires) so then I called another that matches he offered me $480 I thought I was sold. Then on a hunch I called one more company and guess what he quoted me $550, he then mentioned they price match. So I gave him my lowest he hmmd and hahhed for a while then said ok I can beat it, how about $453 out the door! Sold!!!
So we drop the car off today the tech ringing me up goes wow you got one heck of deal, I said I sure did. Then I pulled out my coupon for an oil change ... you should have seen the look on his face. You have a coupon for $12.99 for an oil change! He then informed me his price is $18.99, I told him well google it you can also find the coupon ... LOL ;). Guess what no expiration date, so I printed like 30 of them ... LOL.
They called me back to inform me I need an alignment, $185 for that ... ok next paycheck! Rick goes to pick up my car, guess what they had 3 Kia Sorento's in and they needed an alignment. Yup the tech messed up and gave my car an alignment. You guessed it free of charge their mistake. See I told you prayers answered beyond my wildest dreams! I have been given a Christmas Miracle that will last with me for the rest of my life!

Tempt My Tummy Tuesday - Bavarian Pot Roast

Sorry everyone still not feeling well so my plan to put up some more yummy holiday goodies is postponed. This is a great recipes for a busy day and when you have some apples on hand! You'll love it!

All yo need :)
Add the meat and oil

Dash of salt
Now the pepper
Add the cloves
Add the ginger
Rick the helper did the apples for me

Add the apples to the crock pot
Add the water
Add the onion
Come home to this!!
Dish up the plates!
Bavarian Pot Roast

Ingredients:
3 lbs beef pot roast -- (3 to 4)
1 tsp. oil
1 tsp. salt
1/2 tsp ground ginger
1/8 tsp pepper
3 whole cloves
4 apples -- cored and quartered
1 sliced onion
1/2 cup apple juice -- or water
3 tbsp flour -- (3 to 4)
3 tbsp water -- (3 to 4)
Wipe roast and trim fat.

Directions:
Rub top of roast with oil. Dust with salt, ginger and pepper. Insert cloves in roast. Put apples and onions in crockpot and top with roast. Pour in juice.
Cook on LOW 10-12 hrs or on HIGH 5-6 hrs.
Remove roast and apples - mix flour and water to a paste and stir into crockpot. Cover and cook until thickened. Makes 6-8 servings

Make Something Monday ... Christmas Cookies

Make Something Monday

As promised recipes for the cookies I made :). Sorry this is kind of a repeat of this weekend, been crazy busy and sick on top of it ;(. I'm hoping I feel better by the time Christmas rolls around. So I'm sort of calling it in, but technically I didn't give recipes ... LOL. Much love!

We Start with one of my favs:
1/2cup butter or margarine, softened
3tablespoons molasses
2teaspoons ground ginger
3/4teaspoon ground cinnamon
1/4teaspoon ground cloves
1egg
1pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1/3cup coarse sugar

Heat oven to 375°F. In large bowl, beat butter, molasses, ginger, cinnamon, cloves and egg with electric mixer on medium speed until well blended. Add cookie mix; beat until soft dough forms.
2.Shape dough into 1-inch balls. Roll balls in sugar. On ungreased cookie sheets, place balls 2 inches apart.
3.Bake 8 to 10 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheets to cooling racks. Store in tightly covered container.
High Altitude (3500-6500 ft): No change.

3/4cup canned pumpkin (not pumpkin pie mix)1/4cup butter, softened (not melted)1teaspoon vanilla1egg1box (19 oz) Betty Crocker® Gluten Free chocolate chip cookie mix1/2cup raisins, if desired1/4teaspoon ground cinnamonPowdered sugar, if desired

1.Heat oven to 350°F. Grease cookie sheets with shortening.2.In large bowl, stir pumpkin, butter, vanilla and egg until blended. Stir in cookie mix, raisins and cinnamon until soft dough forms. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.3.Bake 10 to 12 minutes or until almost no indentation remains when lightly touched in center and edges are golden brown. Immediately remove from cookie sheet to cooling rack. Cool completely, about 15 minutes. Sprinkle with powdered sugar.

Now these are sinfully good! They are now my favorite
1pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix1bag (14 oz) flaked coconut1/4cup milk1can (14 oz) sweetened condensed milk (not evaporated)1/2cup semisweet chocolate chips1teaspoon butter or margarine

1.In large bowl, stir together cookie mix and coconut. Stir in milk and sweetened condensed milk until well blended. Cover; refrigerate 2 hours.2.Heat oven to 375°F. Line cookie sheets with cooking parchment paper or use ungreased cookie sheets. Using 1-tablespoon-size cookie scoop, scoop dough onto cookie sheets 2 inches apart.3.Bake 12 to 14 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely.4.In small microwavable bowl, microwave chocolate chips and butter on High 1 to 1 1/2 minutes, stirring every 30 seconds, until melted and stirred smooth. Using fork, drizzle chocolate in lines over cookies. Store loosely covered.High Altitude (3500-6500 ft): Heat oven to 350°F. Stir 3/4 cup Gold Medal® all-purpose flour into dry cookie mix. Bake 14 to 16 minutes.

These you saw a week ago, but were so yummy I added to my list
1pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
3tablespoons butter or margarine, melted
1teaspoon orange extract
1teaspoon vanilla
1egg
5drops yellow food color
2drops red food color
1bag (12 oz) white vanilla baking chips (2 cups)

Stir in baking chips.2.On ungreased cookie sheets, drop dough with 1 1/2 tablespoon-size cookie scoop or by rounded tablespoonfuls about 2 inches apart.3.Bake 9 to 10 minutes or just until dough is set (do not overbake). Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely.

LOL totally forgot to put the chocolate drizzle on these
Chocolate - Drizzled Cherry Bars
3/4 c butter or margarine, softened
3/4 c sugar
1 egg
2 1/4 c Flour
1/4 tsp salt
1/4 c cherry-flavored gelatin (from 4-serving size box)
3/4 c semisweet chocolate chips
3/4 tsp vegetable oil

1. Heat oven to 350°F. In large bowl, beat butter and sugar with mixer on medium speed until creamy. Beat in egg until well blended. On low speed, beat in flour, salt and dry gelatin until soft dough forms. Press dough in bottom of ungreased 13x9 inch pan.
2. Bake 11 to 14 minutes or until center is set. Cool completely about 30 minutes.
3. In resealable freezer plastic bag, mix chocolate chips and oil; seal bag. Microwave on High 30 to 45 seconds, squeezing chocolate in bag every 15 seconds, until smooth. Cut 1/4-inch tip from corner of bag; drizzle chocolate over bars. Let stand about 1 hour or until chocolate is set. For bars. Cut into 8 by 4 rows; cut each bar in half diagonally to make triangles.

These were last years favorites
Now I just use the cookies and make them bars so no frosting or putting in the spritzer but if you have time the original rock also!

1.Heat oven to 375°F. In large bowl, stir cookie mix, butter, egg, flour, 1 teaspoon extract and the nutmeg until soft dough forms.2.Fit cookie press with desired template. Fill cookie press with cookie dough; press cookies onto ungreased cookie sheets. 3.Bake 6 to 8 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 20 minutes.4.In small bowl, stir powdered sugar, milk and 1/4 teaspoon extract until desired consistency. Drizzle over cookies. Sprinkle cookies with colored sugar.High Altitude (3500-6500 ft): No change.

These I took this recipe and adapted it to my own!
Part I
These are suppose to be mini cupcakes but I of course did bars
For this recipe I took the cookie base and the filling only. I put half the cookie base on the bottom and then the filling and topped it with the rest of the cookie base. My former co-workers wife told me that he absolutely LOVES these. I took the extra to him! Here's the original recipe you can adapt like me or do it the way they say. Again depends on time!

Cookie Base1pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix1/3cup unsweetened baking cocoa1/2cup butter or margarine, softened1egg
Filling1/2cup powdered sugar1/2cup peanut butter2tablespoons butter or margarine, softened1teaspoon vanilla1/4teaspoon salt
This part I didn't use:
Topping1/2cup whipping cream1cup plus 2 tablespoons semisweet chocolate chips1tablespoon peanut butter

1.Heat oven to 350°F. Line 36 mini muffin cups with mini foil candy cups (about 1 1/4 inch). In large bowl, stir cookie base ingredients until dough forms. Press about 1 tablespoon dough into each foil cup. Bake 8 to 9 minutes or until puffy and set. Cool completely, about 30 minutes. Remove from pan.2.In small bowl, mix filling ingredients until well blended. Press about 1 teaspoon mixture on top of each cooled cookie.3.In 1-quart saucepan, heat whipping cream just to boiling over low heat, stirring occasionally; remove from heat. Stir in 1 cup of the chocolate chips. Refrigerate about 30 minutes or until cooled. Spread about 2 teaspoons chocolate mixture over each cookie cup.4.Place remaining 2 tablespoons chocolate chips and 1 tablespoon peanut butter in resealable food-storage plastic bag; seal bag. Microwave on High 30 to 60 seconds or until softened; knead to mix. Cut off small tip from one corner of bag. Squeeze bag to drizzle chocolate mixture over each cookie cup.
