Tempt My Tummy ~ Pumpkin Banana Bread

I love pumpkin so this time of year is my all time favorite. So what do you do when you have some banana's you need to use up (only good for bread) and have tons of cans of pumpkin (yes Costco got me). You Make Pumpkin Banana Bread!!! Oh yes my dears I actually baked bread in the oven .. I know shut your mouth! I do know how to make bread in the oven not only in the bread maker!

Check it out it's super easy and I doubled it and made 2 loafs. One for us and one for the neighbor that let's Cole hang out almost every day! Yes this is the loaf I handed the husband the bread and he said "I love you" and then got that look I didn't just say that .. LOL

And this is what happens you get it on your shirt!
Then of course you have to have a slice! (and another ... and another... )

Prep Time: 10 minutes

Cook Time: 1 hour (one loaf, or 40 minutes if using mini loaf pans)

Ingredients:

  • 2 mashed ripe bananas
  • 1 cup pumpkin puree
  • 1/4 cup canola oil
  • 2 eggs
  • 2 cups flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp cinnamon

Preparation:

Preheat oven to 350 degrees. Spray a 8 1/2 X 4 1/2-inch loaf pan (or 4 mini loaf pans) with nonstick cooking spray. (I use canola oil and wipe out the excess.)

Place mashed banana, pumpkin puree, oil, egg and egg whites in a large bowl. Beat with an electronic mixer on low speed.

Place flour, sugar, baking powder, baking soda, salt, nutmeg, ginger and cinnamon in a medium bowl and stir with a whisk. Add flour mixture to banana and pumpkin mixture and beat until just moist.

Pour batter into loaf pan and bake for 1 hour or until toothpick placed in center comes out clean.

  8. I have to admit that I have never had pumpkin bread, I know that's just wrong, but I do LOVE banana bread and pumpkin so I'm sure I would love this as well. Of course there is the issue of me not being able to bake this, but I'll have to try it soon!

  12. I have one of those black banana's in my kitchen. Tonight I am going to try to make Eclairs with banana caramel custard with a caramel glaze. Thank you for the remider lol of my greasy leftover banana. Might as well put it to good use!

    We are going to have to trade addresses so we can trade bake goods! Seriously I would love to send you and your family some goodies!

  21. Oh, man, if I made all stuff you put up here, I would be as big as a house!! :-)
    I, too, like to bake bread in the oven and the bread maker. I used to even make regular yeast breads in the oven before I had nerve damage... now I just can't knead the dough anymore... I LOVE the smell of baking bread.
