TMTT ~ Meatball Pie, Pulled Pork & Snickerdoodle Blondies

Since the new recipes are stacking up I'm having my post scheduled out for months! I figure I'll have to share with you a few I did this week. I love things that are quick and easy and here a some that fit that category!

This I like my tator tot casserole except in a pie with no potatoes, well you get the idea!

Ingredients:
1 Bag of Frozen Meatballs
1 Pkg Pie Crust (2 crust)
1 can Green Beans
1 can Corn
1 cup sour cream
2 cans cream of mushroom
1 tsp pepper
1 tsp oregano
1 tsp soy sauce

One Pie crust down, mix up all the other items in a bowl, pour into pie crust, top with second pie crust. Bake at 350 for 20-25 minutes or so depends on your oven.

Slow Cooker Pulled Pork (spice rub from Cooks Illustrated)

Spice Rub:
1 tablespoon ground black pepper
1-2 teaspoons cayenne pepper
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
1 tablespoon dried oregano
4 tablespoons paprika
2 tablespoons table salt
1 tablespoon granulated sugar
1 tablespoon ground white pepper

1 (6-8 pound) bone-in pork shoulder
½ teaspoon liquid smoke (optional)
2 cups barbecue sauce

1. Mix all spice rub ingredients in small bowl.

2. Massage spice rub into meat. Wrap tightly in double layer of plastic wrap; refrigerate for at least 3 hours. (For stronger flavor, the roast can be refrigerated for up to 3 days.)

3. Unwrap roast and place it in slow cooker liner. Add liquid smoke, if using, and ¼ cup water. Turn slow cooker to low and cook for 8-10 hours, until meat is fork-tender.

4. Transfer roast to cutting board; discard liquid in liner. “Pull” by tearing meat into thin shreds with two forks or your fingers. Discard fat.

5. Place shredded meat back in slow cooker liner; toss with 1 cup barbecue sauce, and heat on low for 30-60 minutes, until hot. Serve with additional barbecue sauce.

Alexis Notes: This was AMAZING and very yummy, now I would have loved it even more if I let the rub sit the 3 hours, but as always I was in a hurry. I also add a bottle of my dad's beer he left here, I saw on a few sites that people added beer so I did too. It made a great taste and the pork was super tender and easy to shred!
And I leave you with a recipe from one of my favorite foodies Heidi at Tried-and-True cooking with Heidi she post the most amazing recipes I think I've posted like 5 and have tried even more! LOVE her and her recipes! And for you who are thinking but she's trying to loose weight don't worry these were wrapped up and given to the neighbor. I try to bring baked goods to them at least once a week since Cole goes over there like every night and eats dinner often there!

Snickerdoodle Blondies
2 2/3 cups flour
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg (I left out because I was out)
1 tsp salt
2 cups packed brown sugar
1 cup butter- room temperature
2 eggs- room temperature
1 tsp vanilla
2 TBSP sugar mix with 2 tsp cinnamon

Preheat oven to 350. Combine flour, baking powder, 1 tsp cinnamon, nutmeg and salt; set aside. Beat butter and brown sugar 3 - 5 minutes. Add eggs 1 at a time mixing well after each. Add vanilla and beat until smooth. Stir in flour mixture and spread in greased 9 x 13 baking dish. Sprinkle combined sugar and cinnamon mixture over top and bake 25-30 minutes or until toothpick inserted near center comes out clean. Don't overbake!! Cool and cut.

  5. I'm hungry now. Can I eat lunch at 10am?

    I made pulled pork last week: marinated pork butt in root beer overnight, cooked it on low in the crockpot for 6 hours, drain root beer, shred pork, add bottle of bbq and leave on warm. YUM.

    That is my lazy version. But, it's delicious.

  13. Yummy! The first one looks so easy! And I love that you used Sweet Baby Rays in your pulled pork-love that stuff!

    Snickerdoodles in a pan?! How easy! I'll have to try that one...when I can open my mouth wide enough again after having those wisdom teeth out! LOL!

    Pulled Pork looks wonderful and I love snickerdoodles. Do the blondies taste pretty close to them?

  15. I use the same BBQ sauce for our pulled pork. I've either put mine in the Dutch Oven or in the crock. Both seem to work.
