Manic Monday Meals ~ Phyllo Dough Bake Off

I picked up Phyllo dough for a recipe a while back and then had it left over so you know me and my Google Search! I found two that were great, I loved them the boys were ok with them of course not HUGE Phyllo fans but they did eat it! :)

First was almost like a quiche with a flaky top :)

Ingredients

  • 1/2 cup butter, melted, divided
  • 12 sheets phyllo dough (14 inches x 9 inches)
  • 3 cups diced cooked chicken
  • 1/2 pound sliced bacon, cooked and crumbled
  • 3 cups frozen chopped broccoli, thawed and drained
  • 2 cups (8 ounces) shredded cheddar or Swiss cheese
  • 6 eggs
  • 1 cup half-and-half cream or evaporated milk
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • Brush sides and bottom of a 13-in. x 9-in. baking dish with some of the melted butter. Place one sheet of phyllo in bottom of dish; lightly brush with butter; repeat with five more sheets of phyllo. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.
  • In a large bowl, combine the chicken, bacon, broccoli and cheese; spread evenly over phyllo in baking dish. In a small bowl, whisk the eggs, cream, milk, salt and pepper; pour over chicken mixture. Cover filling with one sheet of phyllo; brush with butter; Repeat with remaining phyllo dough. Brush top with remaining butter.
  • Bake, uncovered, at 375° for 35-40 minutes or until a thermometer reaches 160°. Let stand for 5-10 minutes before cutting. Yield: 12 servings.
ALEXIS NOTES: I switched out with the my now famous Turkey Bacon (it's a weekly staple), used freshed broccoli, Fat Free Evaporated Milk, 2% milk & low fat margarine.

My next is a very moist meatloaf in a flaky crust. It's funny growing up I HATED meatloaf but now I seem to make it often just in different forms. Sorry mom but these have more flavor :).

Ingredients

  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano leaves
  • dash garlic powder
  • 2 tablespoons chopped onion
  • 1/2 cup fine dry bread crumbs
  • 1/4 cup half-and-half
  • 1lb. ground beef
  • 1 can (4 oz.) mushroom pieces, drained
  • 1/3 cup shredded swiss cheese
  • 1 pkg. (1 lb.) frozen phyllo (filo) Dough, Thawed (only part used)
  • 1/4 cup melted butter or margarine
  • How to make it

    • Preherat oven to 375.F
    • In a large bowl, beat eggs. Stir in salt, black pepper, oregano, garlic powder, onion, 1/4 cup of the bread crumbs, and half-and-half. Add meat, mixing thoroughly. Stir in mushrooms an cheese.
    • On a damp cloth. lay one sheet of phyllo dough. Lightly brush with melted butter. Lightly sprinkle with some of the remaining bread crumbs. Spread second sheet on top. Repeat with butter and crumbs.
    • Shape meat mixture into a roll. Place at short end of buttered sheets, leaving 3/4 inch margin on each side.
    • Fold side edges over meat.
    • Lift end of cloth and roll meat up in the dough.
    • Repeat step 3, using 2 more sheets of dough.
    • Place wrapped meat at end of buttered sheets. Fold edges over. Roll up meat Place on greased jelly roll pan or other shallow pan.
    • Bake at 375.F for 1 hour or until light brown and crisp. Slice an serve.
    • Good served with : tomato sauce or sour cream seasoned with salt, pepper,grated onion and Dijon-style mustard.
ALEXIS NOTES: I use Italian bread crumbs, Fat Free Half & Half, Skipped the mushrooms not big fans here, used mozzarella cheese & half the phyllo.

  6. I've never worked with phyllo dough! Those sound like yummy meals. I hated meatloaf growing up too and it's my families favorite meal which surprises me.
