Skinny Meatloaf ... Juicy Meatloaf (FMD - Fast Metabolism Diet)

Another Sunday Supper Meal Idea ... yes I was on a Meatloaf kick for a while. The boys are meat eaters so I'm always on the hunt to find ways to bring it to them on the lighter side!

Next on my hunt for a yummy meatloaf (or in my case a Turkeyloaf) was found on the Fast Metabolism Diet website that I made, it can be used for phase 1 and 3.  This was a simple dinner to make I steamed some broccoli to go with mine, the boys of course had scallop potatoes (no carbs for this girl this time).


Phases 1 and 3
Serves 4
Prep time: 10 minutes
Total time: 40 to 45 minutes
1 pound lean ground beef
2 egg whites
1/2 cup old-fashioned or rolled oats
1/4 cup plus 2 Tbls. sugar-free ketchup (or Homemade Sugar-Free Ketchup)
1/4 cup finely minced onion
1 tsp. sea salt
1/2 tsp. black pepper
Preheat the oven to 375 degrees F.
Mix all ingredients (except the 2 tablespoons of ketchup) in a large mixing bowl until well combined. Lightly press the mixture into an 8-by-4-inch loaf pan. Spread the remaining ketchup on top. Bake for 30 to 35 minutes (the inside will no longer be pink). Let the meatloaf rest for 5 minutes before slicing.
Serve with Phase-appropriate veggies. For Phase 1, serve with 3/4 cup brown rice per person. For Phase 3, be sure to add a healthy fat, like a side salad topped with 2-3 Tbls. salad dressing.
ALEXIS NOTES: I used Turkey since that is what I had on hand, I found organic ketchup that I used and a red onion (again what I had on hand).

Sloppy Goodness .... Healthy Sloppy Joe Mac (FMD Recipe)

On my way back to the healthy me I went back to trying the Fast Metabolism Diet.  Trying to make it easy on me for dinners I found recipes the boys would like to (well fingers crossed they would).  This one was a little spicy but 3 out of 4 of us enjoyed it.

This recipe was a for Healthy Chili Mac / Sloppy Joe so I just called it a Sloppy Joe Mac.  It was pretty easy to make and tasty.


Phases 1 and 3
Serves 4
Prep time: 15 minutes
Total time: 30 minutes
1 pound lean ground beef
1 cup chopped onion
2/3 cup chopped green bell pepper
2 cups tomato sauce (sugar-free and organic — or homemade)
2 tablespoons tomato paste
1 1/2 teaspoons prepared mustard
1 1/2 teaspoons tamari
1 1/4 teaspoons chili powder
1/2 teaspoon dried oregano
3/8 teaspoon powdered stevia
1/4 teaspoon sea salt
1/8 teaspoon black pepper
For Sloppy Joes:
2 sprouted grain buns, split
For Chili Mac:
Cooked quinoa-kamut macaroni (4 cups for Phase 1 or 2 cups for Phase 3).  You could also use brown-rice pasta for Phase 1.
Heat a large skillet over medium heat. Cook the beef, onions, and green peppers together, stirring until the beef is crumbled and browned. Stir in the remaining ingredients, and reduce the heat to medium-low. Cover and cook 15 minutes, stirring occasionally.
For Sloppy Joes:
Divide the beef mixture among the bun halves and serve open-faced. Top with pickles, raw onions, and/or lettuce
For Chili Mac:
Stir the cooked macaroni into the beef mixture and serve.
ALEXIS NOTES: I used ground Turkey instead of beef and Quinoa Noodles (found in the organic/gluten free section at most supermarkets).
