Tempt My Tummy Tuesday - Pampered Chefs Meatloaf

In my mission to do non ham dishes for Rick ... LOL. I went looking for a great ground beef dish, I also was talking to another blogger about loving Pampered Chef recipes. I only have tried a few but thought heck I bet there is a ton out there. So I did a search and guess what? Yup there is a ton and I found a GREAT site that has them all listed (yes it is now added to my favorites), so you looking for a Pampered Chef Recipe check out her site out here .... Joyce's Fine Cooking. This has become a favorite that I will make again for the boys, this time I'll have the oats on hand so I don't have to run to the grocery store with 4 kids (I had my friends daughter too).

What you need.
Add the oats to the meat
Add the green pepper
Add the onions
Add the BBQ sauce
Add Thyme
Add Egg
Add pepper
Put in the DEEP loaf pan
(I used a little extra beef, I have lots of boys here)
Out of the oven with BBQ Sauce
I served with red potatoes that I mixed with oil and a package of onion soup.
Makes them very yummy!

BBQ Meat Loaf

1 1/2 pounds lean (90%) ground beef
3/4 cup quick or old-fashioned oats
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
1/2 cup barbecue sauce, divided
1 egg
1 teaspoon dried thyme leaves
1 teaspoon salt
1/4 teaspoon ground black pepper

Preheat oven to 350°F. Combine ground beef, oats, bell pepper, onion, 1/4 cup barbecue sauce, egg, thyme, salt and black pepper in Classic Batter Bowl; mix lightly but thoroughly.

Shape meat mixture into loaf in Stoneware Loaf Pan. Insert Digital Thermometer into center of meat loaf. Bake 50 minutes.

Spread remaining 1/4 cup barbecue sauce over meat loaf. Bake an additional 10 minutes or until meat is no longer pink in center of meat loaf and internal temperature reaches 160°F using Digital Thermometer. Remove from oven. Let stand 10 minutes before slicing.

Yield: 6 servings

Nutrients per serving: Calories 280, Fat 13 g, Sodium 660 mg, Fiber 2 g

  1. Okay, now I am hungry. When I was growing up my mom would make meatloaf and I hated it. I have a recipe that I make from Fannie Farmer and my kids grew up loving it. (with mashed potatoes & corn)
    It is an often requested meal. I'll have to try this one. Thanks

Wow I just love the oats added to this making it more fiber in your diets...I added buck wheat flour to our lamb meatballs the other day and hubby never even noticed, as long as things are tasty we can get away with murder, well of the animal kind :) Do not let the kids read this, or even the vegetarians will be after me, and I have enough blog trolls under my bridge :)
