Ok I've been teasing for two weeks now with all the wonderful recipes I've found on Relish! Well my two weeks trial is over and I'm so sad and jealous of one of you! One of my lucky winners will win a ONE year subscription, do you think I can enter too? LOL
I think really I have found a site that really is like what I would like to call my at home wife, yup she picks out new recipes each Thursday for me and guess what makes a grocery list for me!! I think I'm love, move over Rick you getting closer to being replaced by my computer ... just playing ... well :). A few things my two weeks have shown me is when you have a plan you spend less money when you have your week planned out. I don't know about you but usually I'm a fly by the seat of my pants and end up hitting the store a few times a week. Then I always pick up extras and other crap I don't need, plus the gas it takes me to drive there several times a week. Another great thing is if you have a store that sales in bulk go there!! I found the when a recipe called for something I don't use often it's so nice just to buy the little bit. Plus you can buy things like flour for 30 cents a pound, really it all adds up! And for you lucky people that have a big freezer you can check out their freezer meals that are easy to make up and pack away for a quick meal night! They have recipes for low fat, crock pot, kid friendly, budget, vegetarian and special events. Really I couldn't find anything I didn't like about this site it was easy to use, and easy to browse by a certain item in a meal.

Chicken Divan

Prep time: 25 minutes 4 | boneless, skinless chicken breasts | 1 | bunch broccoli | 1 | 10.75-ounce can cream of mushroom soup | 1/4 | cup evaporated milk | 1/2 | cup mayonnaise | 1 | cup shredded sharp cheddar cheese | 1 | tablespoon lemon juice | 2 | teaspoons curry powder | 1/2 | cup breadcrumbs | 2 | tablespoons butter, melted | | olive oil cooking spray |
per serving: 538 calories; 34 grams protein; 36 grams total fat; 3 grams fiber; 12 grams saturated fat; 20 grams carbohydrates; 109 mgs cholesterol; 816 mgs sodium | |

[1] Bring a large saucepan of water to a boil. Add chicken and simmer until the chicken is cooked through, about 15 minutes. When cool, cut into 1-inch chunks.
[2] Steam broccoli until crisp tender but not limp.
[3] In a medium mixing bowl, mix the soup, evaporated milk and mayonnaise until smooth. Stir in cheese, lemon juice and curry powder.
[4] Spray a casserole dish* with cooking spray. Spread chicken cubes and broccoli in dish and top with soup mixture. Cover the dish tightly with heavy-duty foil and affix the cooking label. Mix the breadcrumbs and butter in a small bowl and place into a small ziptop bag. Tape the bag to the top of the dish and place the dish in the freezer.
*use an 8 x 8 pan for 2 and 4 servings and a 9 x 13 for 6 to 8 servings.
ALEXIS NOTES: I'm a chicken shredder easy and the boys eat it better than chunks. I also did fat free evaporated milk to help cut on calories, same can be done with the mayonnaise and cream of mushroom soup.
Pork Tenderloin with Sweet Potatoes

Prep time: 20 minutes Cook time: 7-8 hours
2 | pounds pork tenderloin | 1 | tablespoon vegetable oil | 1 | teaspoon coarse salt | 1 | teaspoon black pepper | 4 | sweet potatoes , peeled and cut into 1-inch pieces | 1 | yellow onion , sliced | 1 | teaspoon garlic, minced | 1/4 | cup brown sugar | 1 | cup chicken broth |
per serving: 431 calories; 49 grams protein; 11 grams total fat; 3 grams fiber; 3 grams saturated fat; 31 grams carbohydrates; 146 mgs cholesterol; 940 mgs sodium | |

[1] Heat the oil in a large skillet over medium heat. Sprinkle salt and pepper over pork and brown the pork in the oil about 10 minutes, turning occasionally, until browned on all sides.
[2] Place the sweet potatoes, onion, garlic and brown sugar in the slow cooker. Place pork on vegetables and pour broth over pork.
[3] Cover and cook on low heat setting 7-8 hours. Add a little more salt to taste, if needed, and serve.
Note: If your sweet potatoes are large, cut the quantity down by one. ALEXIS NOTES: I used a pork roast since that is what I had on hand. I also am a lazy crockpot I didn't brown first. |
Sour Cream Chicken Enchiladas
Sour Cream Chicken Enchiladas |
Prep time: 30 minutes Cook time: 20 minutes 4 | boneless, skinless chicken breasts, diced into small pieces | 1 | white onion , chopped | 1 | tablespoon vegetable oil | 8 | 8-inch flour tortillas, softened | 2 | cups shredded Mexican blend cheese | 1/4 | cup butter | 1/4 | cup all purpose flour | 2 | cups chicken broth | 1 | cup sour cream | 1 | 4-ounce can diced green chiles | | olive oil cooking spray |

Preheat oven to 400 degrees.
[1] In a large skillet, cook chicken and onion together in oil over medium-high heat until chicken is just done.
[2] Divide cooked chicken evenly between tortillas; add 2 tablespoons cheese to each tortilla.
[3] Roll enchiladas and place seam-side down in a baking dish* coated with cooking spray.
[4] Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.
[5] Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas. Top with cheese and bake at 400 degrees for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.
*if serving 2 use a 8x8, 4-6 servings 9x12, 8 servings 2- 8x8 baking dishes
