TMTT ~ Cheeseburger Quiche & Broccoli Salad

Happy Tuesday everyone! I picked up a thing of turkey bacon when it was on sale and wanted to use it up. Then I went to Costco and found a bag of broccoli for so cheap that I had to make so yummy dishes! Then I had an idea to do a cheeseburger and bacon of course quiche! Google it and here we are!

First off I start with this cheesburger quiche that I added the turkey bacon too. Hey I had one package and figured I could get 2 recipes out of it.

Ingredients

  • 3/4 pound ground beef
  • 1 medium onion, chopped
  • 1/3 cup chopped green pepper
  • 1 tablespoon all-purpose flour
  • 1 tablespoon dried parsley flakes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 cup evaporated milk
  • 2 eggs, beaten
  • 1 1/2 cups shredded Cheddar cheese
  • 1 (9 inch) unbaked pastry shell

Directions

  1. In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the flour, seasonings, milk, eggs and cheese. Transfer to pastry shell. Bake at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

ALEXIS NOTES: I added Turkey Bacon and used the whole can of fat free evaporated milk.

Next on my list was a Broccoli Salad, my mom always makes this and it's my favorite. I called mom while shopping to find out what was in it but she wasn't home so it was a fly by the seat of her pants recipe. When I got home Paula Deen came to the rescue even though I was missing a few things.

Ingredients

  • 1 head broccoli
  • 6 to 8 slices cooked bacon, crumbled
  • 1/2 cup chopped red onion
  • 1/2 cup raisins, optional
  • 8 ounces sharp Cheddar, cut into very small chunks
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1/4 cup sugar
  • 1/2 cup halved cherry tomatoes
  • Salt and freshly ground black pepper

Directions

Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, onion, raisins if using, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.

ALEXIS NOTES: I used the other half of my turkey bacon for this recipe. I didn't have the red onions that should have been added. I used shredded cheese instead of cubing up some cheese. Usually I have low fat mayo on hand but Rick picked this one up and I've been trying to use it up. To make the dressing I added those ingredients to the jar since it had about the right amount in there and just shook it up. Mom does this all the time and hey why mess with perfection. And I'm not a tomato fan so I skipped that!

  5. The broccoli salad looks terrific! The salad bar at Ruby Tuesday's has something similar, but I'm the only one in my family who eats it. :(

    We've been using the Canola mayo from Hellmann's (same as Best Foods, I think). It tastes more like "real" mayo but is healthier. I don't know why, but I think they don't add so much corn syrup.

  9. Mmmm perfect. I LOVE the broccoli salad, and turkey bacon would be so nice in it. Yum! And cooking? Totally about what you have and working with the ingredients. I bet it tasted great!

  12. These both sound really good... we both especially love bacon and the turkey bacon isn't at all half bad. I'd have to take the raisins out of the salad though, I really don't like raisins except in trail mix.
