Cool Sweet Treat

Since I’ve been dieting for you know the end of time, I still need something to curb my sweet tooth.  I found this of course on Pinterest my obsession of the current times.  BUT I am actually making things I find … yup I tell myself that so I rationalize it is ok.

My latest creation are these yummy Low Calorie Greek Yogurt Cheesecake Minis on Volume 25 blog.  She added a few blueberries, I didn’t have any left so I just drizzled a little agave syrup.

Greek Yogurt Cheese Cake Mini's

INGREDIENTS:
12 oz Plain Greek yogurt
1 package Sugar Free Fat Free Cheese Cake Pudding Mix
1 Cup almond milk (or any other milk)
3 Tbs Butter
5 Graham Crackers
12 Cupcake liners

(I used low fat Graham Crackers, you can also use non fat Greek yogurt to lower fat / calories)

DIRECTIONS:
In Zip Lock Baggie, crush graham crackers. Melt butter and mix into graham crackers until well blended. In a lined cupcake tin, evenly distribute cracker mixture, using your fingers, pack it down. In a mixing bowl, add Greek yogurt, Cheese cake pudding mix, and milk and mix well. once well mixed evenly distribute into the cupcake tin. Pop in your freezer or refrigerator for about 30 minutes. 

I put mine in the freezer it was the perfect treat.

Makes 12 Cupcake sized cheesecakes

Healthy Drink Week 2

As many of you know I’m been doing my work out at home with Jillian Kettlebell DVD.  I’ve been even better about my eating habits no snacking on crap during the day and doing a healthy smoothie in the morning for breakfast.  I really never thought this would feel me up but it’s actually doing the trick.  This week I tried a new recipe and I must admit it’s not as tasty as the Green Monster I posted last week and is not as filling.  I know you would think I would like the one that was more fruity.  Here is the Kate’s Power Smoothie I found for this week.

Kate’s Power Smoothie

Recipe by Our Best Bites

1 cup orange juice (preferably the good stuff, like the not-from-concentrate orange juice)
3 tablespoons oat groats or 2 tablespoons steel cut oats (optional…kind of…)*
3/4 cup fat-free vanilla Greek yogurt (make sure it’s Greek and not Greek-style)
1 1/2 cups frozen blueberries
3 cups baby spinach leaves
1 1/2 cups crushed ice

Combine ingredients in the jar of your blender and blend. You may (read: probably will) need to run it through twice. Serve immediately. Makes 1 giant smoothie, 2 smaller smoothies, or 3 snack-sized smoothies.

I used Steel cut oats since that is what I could find.

This was made with blueberries and you would think I would LOVE this over the GREEN one from last week but not really. LOL I know who would think a Green shake in the morning would be ideal for me.  I have decided a whole week of this would not be good since I get hungry to quick after drinking it and don’t want to get into the habit of snacks again.  So I am going to try a new one I found has tofu.  I’m a little scared but let’s wish me luck!

On a side note the boys started up swim again 2 days a week.  Tuesdays are going to be my down fall since swim is right after school and then we come home and our Tuesday dinner friends come right over.  So no work out that day, BUT I’m going to stick to 5 days a week with my DVD instead of 6 so I don’t feel too guilty.  When it gets nicer out we can take the kids to walk to make up for it!  I’m on a mission Smile.

(CLOSED) "Nourish Your Inner Goddess" Gift Pack Giveaway


Thank you to Yoplait I was given the opportunity to try out their new greek yogurt. I was so excited because my new cookbook had several recipes calling from greek yogurt. Yes my new cookbook was a healthy cooking so I had to pick up some healthy things that I don't usually have in the house.

Now I'm new to Greek Yogurt I know you're all rolling your eyes but I've always heard about it but never tried it until now! I'm trying to be better with my food intake and trying to find new things that are tasty to add a little spice to my diet. The Greek Yogurt was perfect fit with 12 grams of protein and came in great flavors such as Strawberry, Blueberry, Honey Vanilla and Plain. I was so impressed with how creamy it was compared to what I was use to.

So of course I found the tastest recipe I could find and tried it out! OMGosh was it the perfect pairing to my blueberry cobbler. I picked up the plain for this recipe but I've tried the other flavor and just loved it. And you know my favorite TV show Biggest Loser even featured!!

Blueberry Cobbler w/ Greek Yogurt Topping
Blueberry Cobbler with Yogurt Topping
1 cup fat-free Greek Yogurt
2 tbs confectioners' sugar
2 pints fresh blueberries
2 tsp orange zest
2 tbs light brown sugar
2 tbs ground flaxseed
1 tbs whole wheat pastry flour

Topping
1/2 c old-fashioned oats
1/2 c whole wheat pastry flour
1/2 c packed light brown sugar
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
1/4 tsp salt
1/3 c trans-fat free margarine, chilled
2 tsp ice water

Preheat oven to 375F. In a medium bowl, mix the yogurt with the confectioners' sugar. Refrigerate until ready to use. Place the blueberries, orange zest, brown sugar, flaxseed, and flour in a a large bowl. Mix well to combine. Transfer to an 8 x 8 inch ungreased baking dish.

Place the oats in a food processor and pulse until a chunky flour forms. Add the flour, brown sugar, baking powder, cinnamon, cardamom, and salt to the food processor bowl and pulse 2 or 3 times to combine. Add the margarine and ice water, then pulse 7 or 8 times, until pea-size crumbs start to form. Do not over-mix.

Sprinkle the topping over the fruit and bake 35 to 40 minutes, until the berries are hot and the topping is cooked through. Cool 5 minutes. Spoon the yogurt mixture over top and serve.

ALEXIS NOTES: I used YoplaitGreek plain flavor, I of course didn't have a orange zest so I used a little orange extract, I bought the flaxseed in the bulk section so I didn't have to have too much and ran out of whole wheat pastry flour so I used my whole wheat white flour by King Aurthur.
