Skinny Meatloaf ... Meatloaf Parmesan

Sunday Supper Time Ideas ... Oh yes I've even named it (stop shaking your head I know it's not original but it works).  This was a easy one that was so yummy!!

I saw Audrey on The Taste a while back and wanted to give one of her skinny recipes a try. I came across her Meatloaf Parmesan which looked so yummy she served with Rosemary Potatoes.  I just skipped those potatoes and made regular mashed for the boys, I just had a slice of the meatloaf myself to keep low on my calories for the day.  This was a hit with the boys and our guest.  Our guest said he never had meatloaf with cheese before and really enjoyed it!!


Meatloaf:
1 onion diced
3 cloves Garlic finely chopped
1 tbsp Olive Oil
1 LB lean ground beef
2 eggs
½ cup Parmesan or Romano cheese, or a combo of the two
¾ cup bread crumbs
2 roasted red peppers chopped
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
¼ cup Mozzarella cheese
Pre-heat oven to 350, oil (cooking spray is fine) a loaf pan and a rimmed baking sheet.
Put oil in pan, heat on med-high and add the onions cooking for 5-10 min until soft. Toss in the garlic and cook for another 5 min, remove from pan to a plate to cool. While the onions and garlic cool put everything else in a large bowl, hold the marinara and Mozzarella back though. Once the onion mix is cool add to the bowl and mix with your hands until just combined, don’t over mix it will make the meat tough. Mold into an loaf pan, top with marinara sauce.
Bake in oven for 50-60 minutes, after about an hour take out the meatloaf, top with mozzarella and put back into oven and broil at 400 for 3-5 min, watch so it doesn't burn.
Take out meatloaf and let it rest for 10 minutes. Time to plate and serve.
ALEXIS NOTES: I used pizza sauce since that is what I had on hand along with Panko bread crumbs.

  2. It sounds yummy. Yes my mom made meat loaf and I hated it. Meat loaf is one of my families favorite meals. I make mine from the Fannie Farmer Cookbook, it's our favorite.
