Fall Recipes ... Candy Corn Waffles

A while back I did the Watermelon Waffles for the boys.  Then last week Caden asked for waffles for dinner and I thought well it would be fun to try out the Candy Corn Waffle recipe from the same lady on Random Thoughts of a SUPERMOM.  Now don't worry there are no candy corn candies in this recipe but they sure are cute and resemble the candy!  For breakfast or for dinner that is made up of breakfast treats this is the perfect recipe.


I started with the perfect waffle recipe (you could use store bought but I rather make my own).

INGREDIENTS:
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
DIRECTIONS:
1.Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
2.Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.


Here is the how to make the Candy Corn Waffles:

For the Candy Corn look I had to doctor up the batter a little bit so between the step 1 and 2 of the directions.  I separated the batter into 3 bowls (one small, medium and large).  You will need the small bowl to be the regular batter.  The medium size bowl you will add yellow food coloring to the batter.  I like to use food coloring gel.  The large size bowl with the most of the batter you need to add yellow and red food coloring to make orange.  

Once your waffle maker is warmed up spray it with cooking spray.  Then make a small circle in the middle of the white batter, then add a outer ring of yellow and finish with orange on the outer ring.  Cook according to your waffle maker.  Break into fourth and tada you have candy corn shaped waffles!

Slumber Party Cookies

Another great part about having a guest besides the boy were totally stoked, I got to bake.  Being on this strict diet I haven't been able to eat a lot of items so our meals haven't been fancy just functional.  Unless I'm hitting up a party it hasn't been fun in my kitchen.  Until this past Saturday when we had our first sleep over!  Caden requested I make a cookie, yup he is so my boy and all about the sweets, why we don't usually have many in the house.  I saw a post on Facebook with these new Candy Corn M&M's and making cookies with them.  So of course I made my shopping list and came home to make them.  Well of course I was a dummy and couldn't find the recipe, so what should one do but Google it and find it on Pinterest.  I found a great recipe for White Chocolate Candy Corn Cookies on Chocolate Moosey's website.   The recipe I started my grocery list with used almond extract not vanilla so I did a little switch and it smelled delish.  I so wish I could have one but I stood strong.  And the empty plate let me know it was a hit.


Ingredients
  • 1 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla (I used Almond)
  • 1 cup white chocolate candy corn MnMs
Instructions
  1. Preheat oven to 375F. Line two cookie sheets with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, salt, baking soda, and baking powder. Set aside.
  3. In a large bowl, beat together the butter, brown sugar, and sugar until creamy, about 2 minutes. Beat in the egg then beat in the vanilla (this is where I used Almond instead of Vanilla). Gradually beat in the flour mixture (do not overbeat). Turn off the mixer and stir in the M&Ms.
  4. Drop heaping tablespoonfuls of dough onto the cookie sheets. Bake 10-12 minutes or until slightly golden around the edges. Let cool on the pan for a few minutes then remove to a cooling rack to finish cooling.


Enjoy these sweet treats!  If you are wondering where to find these M&M's I found them in the seasonal isle at Walmart.  I didn't take a bite of them but my friend tested them and said they were so yummy!

Sweet Tuesday Treats


Why not have some treats right?  Hehe It’s been a trying few days with Cole and his behavior.  First off we start with a treat Cole made for his classmates.  I got a lovely email from Cole’s teacher that Cole took a bag of chips from a classmate and put in his bad … UGH.  Cole did go back later and tell his teacher what he did but still.  So yes that was a treat, Rick told him he had to use his money (for good behavior he earns 10 cents for every star) to buy something for his classroom.  You know me I thought it would be good for him to make something along with it.
First off we made Candy Corn Bark. I found cute little bags at the dollar store then made a little label saying made by Cole especially for you. Thanks for being my friend.
