Hi my name is MOM oh wait my birth-name is Alexis. These days it's MOM and yes that's right it comes out at a level higher then a scream! I have 2 very active boys. Hope you enjoy the wacky world I call life between working full time and taking care of the 3 boys (that includes my husband).
I'm so excited one of my friends came over to let our kids swim and play in the back yard. It was a GREAT night we talked, laughed, had some good food and a few cocktails! The only sad part was I had to work the next morning so we needed to cut it short. But it was so fun, I can't wait to do it again! I wanted to make something yummy for us. I found 3 new recipes that I tried out on our guest and I'm so excited it was a huge hit with all the kids.
I'm going to put the links to the recipes with each picture so you can click on them to see what was involved and this way not to cut and paste and make a very long post (I'm pooped and time for bed .. lol).
I first started with a fun appetizer that I found on the Weight Watcher website when I started to search for a wonton wrapper and a cream cheese. This recipe took it a step further and added in artichokes!!! This Artichoke Tart is super yummy (click the name for the recipe)!
Next on my list was something fun for dinner! Of course sticking with my wonton theme I went to my favorite website Emily Bites (again if you haven't gone there you MUST). She posted these Lasagna Cupcakes that were such a hit with the kids I should have doubled the recipe (again click the name for the recipe). This was so easy to make that I think I may do it again soon!
And last on my list is from another GREAT site Hungry Girl she does these amazing swaps taking high fat items and making them weight watcher friendly. I found this super yummy blueberry cheesecake (click name for recipe). I took blueberries for my parents yard and ran with this, it was so yummy and the kids even liked it!
Enjoy I hope you try these out they were so simple to make and I couldn't get over how much the kids enjoyed it. My girlfriends daughter had seconds and I'm told she usually won't eat much, I was tinkled!!
Hi Everyone it’s Tuesday (well Monday when I’m writing this but you know what I mean) I’m still sick as a dog and feel my head spinning so this is a quick post and sorry I haven’t been around to say hi I hope to be by soon as I can see with out my world spinning .
Tuesday is when my High School Friend April comes over with her son and we have dinner just us moms and the kids. I try to find a new meal each time they come over. Her house is under major construction and that means her kitchen is non existent also so a home-cooked meal is a nice treat.
I found a new website Laa Loosh which is a great site for Weight Watcher and low calorie meals, check them out! First I made some Low Calorie Ranch Dressing Recipe (WW 2pts) for dipping!
And now onto the Chicken Fingers (WW 4pts) to go with our Ranch Dipping Sauce. These were yummy but I’m thinking I need to make sure to chop up the bran flakes better.
And what goes best with chicken strips but Chili Fries! Well of course we can’t have the normal, so I did HG's Cheesy Good Chili Fries (WW 7pts) that were delish!

And I made these for my neighbor who has been so kind and let the boys play with her kids during the day while I’m working and as we know 4 boys who aren’t exactly quiet running around your backyard is not fun! So I whipped up a batch of Oatmeal Banana Bars, YUM .

As many of you know Tuesday nights is dinner with my a friend from high school. It’s great having friends over so I can test out new recipes … . Rick loves chicken and Taco’s so this Saucy-Q Chicken Soft Tacos from Hungry Girl who is now one of my favorite low fat sites to check out. She also includes the WW points for you who follow that program. I really enjoyed these! I ran out of chicken and had a ton of the salsa left over. Next time I’ll do a 4th breast since Rick said he would have ate more if there was more chicken!

And for dessert I had to make Frozen Fruit Pops since we finally had a HOT day here in the PNW. I made a ton so the neighborhood kids had a few too, let’s just say my house is very popular now with hands out for these . Thanks “Cole’s Mom” these are really good is what I was told.

Here are a few treats I made for guest. This first recipe I made is HG's Funkadelic Chili Mac. I doubled it to have enough for the family and had enough to bring to my birthday BBQ party. It was a hit with everyone.

When I went to get my hair done at Rick’s cousin’s house I had to of course bring along something. This Scoopable S'mores Bread Pudding looked so good I had to try it out. OK people WARNING … as you may notice the pre backed photo is of mini marshmallows. Well when they say be careful when under the broil because it will BURN. TRUST me it will burn and stink! Now my second time you see they are on the brown side, yes I let it go a little too long again. NOT as bad as the first time that was unsalvageable! BUT s’mores outside are a little brown so this time was perfect .

As many of you know Tuesday’s here is dinner with my friend from high school and her son. The boys get play time and we get time to sit and chat about our week or the husbands . Last week I made my first Carne Asada and Coconut Cream Pie. I know two first time recipes, believe me this situation has not ALWAYS worked in my favor. Just ask Rick we have had to scrap the meal and pick something up, I’m glad to say this wasn’t the case with this meal. The dinner was delicious the only thing that happened is the kids left more cheese on my floor then in their bellies … hehe
First on the menu was Carne Asada Marinade that we then put on whole wheat flour tortilla’s. The marinade was to make and my favorite was it was made the night before and then the next night I was able to throw it on my indoor grill.

And for the dessert I made HG's Crazy-Amazing Coconut Cream Pie. I have been lead to Hungry Girl’s website and I am VERY impressed! She has the book 300 under 300 (calories) and is on the Food Network. Her revamp of meals is amazing plus she gives WW points for those who follow that program.
