It’s a Watermelon Thang …. (Yup I said Thang!)
The PNW has finally gotten a heat wave … I know I was unhappy with the rain and the kids being inside driving me nuts. But can we have gradual heat … lol. I know I’m picky! Heat means no time to sit down and write a review of the books and movies I normally would do. So I thought why not another recipe … hehe Are you sick of recipes yet? I have them coming out my ears so I must share, You love me and my recipes right? hehe …. Sorry was having an off day Wednesday (I know your reading this Thursday but I write them the night before).
With out further ado some yummy recipes I tried this weekend
First we start out with breakfast, I just had to do these super cute Watermelon Waffles by Random Thoughts of a Supermom.
Watermelon Waffles

Looking for something new to your regular old waffles. These were so cute and perfect for this summer time :).

And then on my mission to make a new popsicle every week this summer I found a recipe that I tweaked and made my own. The original recipe Strawberry and Watermelon Popsicle I turned into blueberry and watermelon, YUMMY .

Another fun and easy popsicle to make for the kids or heck yourself :)

Happy Thursday!

Treats for others
Hope everyone had a wonderful 4th of July. It was a bummer it was on a Monday which means yes you get Monday off but have to work Tuesday. Let’s just say not a lot of sleep when your neighbors are trying to blow up the town. Very little sleep for this mama so a quick post of yummies .
My amazing friend Nichol posted a link with the top 10 popsicles (click her name to go to the post). These Rainbow Pudding Pops were so easy to do and very cool for the kids! I did it the easy way and instead of separating into different bowls I just did 6 puddings and did one color per bowl then poured cleaned the bowl and made the next color. I’m all about making it easy . NOW next year I think I’ll do red, white and blue for the 4th of July. I know isn’t that a cool idea. Yup those ideas always come to me too late … lol. Now let’s hope I remember next year!
Rainbow Pudding Pops!

I love making popsicles for the boys and this was a fun and easy one. I picked up all the ingredients for under $4 and made about 15 pops.

For the different holidays I like to make a special treat for my boss and my secret sister at church. I made this Marshmallow Muffin Mix in a Jar for both of them. I found these marshmallows colored for the 4th and just had to find a recipe to make .
See Marshmallow Muffins (Gift Mix in a Jar) on Key Ingredient. Marshmallow Muffins (Gift Mix in a Jar)

Another gift jar that is so easy to put together. I used the new marshmallow’s that were red/white/blue in shapes of stars for the 4th of July.

And I made a 2nd jar to send off to my boss. These Cowboy Cookie Mix in a jar I think was a classic yummy cookie! I made the label with a stack of oatmeal cookies translucent behind the recipe.

Another quick and easy gift in a jar that will put a smile on your receivers face.

Happy Tuesday everyone, I hope your day goes well. All I know is I’m going to be drinking a lot of coffee! BAD day to be out of K-cups for my coffee maker! Guess I’ll be using the French press today!

Tuesday Dinner (Saucy-Q Chicken Soft Tacos & Frozen Fruit Pops)
As many of you know Tuesday nights is dinner with my a friend from high school. It’s great having friends over so I can test out new recipes … . Rick loves chicken and Taco’s so this Saucy-Q Chicken Soft Tacos from Hungry Girl who is now one of my favorite low fat sites to check out. She also includes the WW points for you who follow that program. I really enjoyed these! I ran out of chicken and had a ton of the salsa left over. Next time I’ll do a 4th breast since Rick said he would have ate more if there was more chicken!

These amazing tacos had a little spice. Perfect for a summer meal!

And for dessert I had to make Frozen Fruit Pops since we finally had a HOT day here in the PNW. I made a ton so the neighborhood kids had a few too, let’s just say my house is very popular now with hands out for these . Thanks “Cole’s Mom” these are really good is what I was told.
