No Bake Double Peanut Butter Bars

Before the New Year my bestie posted on FB a recipe for No Bake Double Peanut Butter Bars, and I just had to give them a try! I went to a Seahawks party 2 weeks ago and made these to share. I love bringing treats, I get my baking needs in and then I take the items out of my house so I don't eat the whole pan! (Don't judge I can do .. lol).

These are simple to make and tasted great, NOW I have always had a hard time with white chocolate melting (this is why you see I use Wilton Candy Melts for everything) and this was no exception, it was not smooth but still tasted great!


INGREDIENTS:
  • 8 tablespoons unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 1 1/4 cups powdered sugar
  • 3/4 cup  + 2 tablespoons creamy peanut butter, divided
  • 1 cup white chocolate chips

DIRECTIONS:

  1. Line a 9x13” pan with foil and spray with cooking spray.
  2. Place melted butter, graham cracker crumbs, powdered sugar, and 3/4 cup peanut butter in a large bowl. Mix by hand until combined. Press firmly into prepared pan.
  3. Place white chocolate chips and remaining 2 tablespoons peanut butter in a microwave-safe bowl. Heat on 50% power in 30 second increments, stirring between each, until melted and smooth. Pour over bars and spread with a spatula to evenly coat.
  4. Chill for at least 1 hour to set, slice into bars. **It’s best to slice them at room temperature so your chocolate doesn’t shatter.**
  5. These can be stored in an airtight container at room temperature or in the refrigerator, depending on how warm your house is. The chocolate will get melty if it’s too hot, so use your judgement on where you should store them.

ALEXIS NOTES: I lined with wax paper to make it easier to come out of the pan. I did cut mine when they were not room temperature so they did shatter. IF your not in a hurry like I was let them be room temperature.

WWW ~ Church Carnival is DONE!!

I'm exhausted I'm so glad that this is done and over with. I know I should look at it that way but sadly some people have made doing this impossible and very difficult! It's sad people need to be petty and show stoppers. Now I know why no one likes to volunteer.

Friday Cole had a sleep over at the next door neighbors house for the little boys birthday party. They were so sweet to let him stay over, I made up a little gift basket.

Saturday I worked until 10am then started on my 200 cupcakes! 11am my one and only helper came by to help frost and make the other games and signs. While here she got a call from busy body #2 called asked what she was doing, when told frosting cupcakes the comment was that is Alexis's job!!! Really so helping is not suppose to happen! Then call from busy body #1 why is she making so many cupcakes. HELLO where you in the FIVE meetings where you said there was 150 kids last year! Then came the flowers that were promised to us, yup not right so had to shop yet again for more items! Let's just say we went until 11pm working, I sat down for a sec and totally slept threw my 2nd job :(.

Sunday at church by 9am! My help was 40 minutes late leaving me with BB or Thing 1 & 2 who were no where around the set up, except to walk by and give orders! Finally Thing 2 got a bit nicer but overall no help. The carnival was fun, I ended up helping for a sec at the popcorn machine but helper for the 2nd shift never showed up so worked it the whole time. I wasn't able to walk around so not a lot of pictures. Even worked the cotton candy machine since that kept getting left with out anyone. At one time I ran put popcorn in one, cotton candy in the other. Ran back dumped the popcorn and ran back to do the cotton candy!

Now this is a lesson in a FREE event! You will have GREEDY people that will show up with backpacks and GRAB everything. We had bags of chips for the BBQ you know one for each, except this lady grabbed 10, hubs grabbed another 10. Then went back in 4 other times to grab more. Even took a bag to put cupcakes in! I'm all about the FREE but there has to be a line to leave some for others!!!

The event was great overall with out much help from thing 1 and 2, one sat down the whole time and who knows about the other! Then clean up time I cleaned up the stations and all that was left was tents, tons of youth to help. I start packing up the boys by this time it's like 4 and the boys are done. Thing 2 decided I needed to stay longer to help clean up. Hello I've been here since 9am and I've gone over and beyond.

Did I mention not ONE word Alexis you did a great job, wow you did a great job with the games and signs! Oh did comment on how my helper did a great job on the lion. Let her know politely that Rick did most of the work and yes my helper did a great job painting it but RICK should get the credit for the MOST. NOPE not even that was nice of him!!!

I'M DONE YOU'VE WON, I refuse to work with you again. And guess what I still haven't been reimbursed over $100!!!! UGH!!!

MSM ~ One Crazy Cookie Style

One of my favorite foodie bloggers is Tiffanee @ One Crazy Cookie. She absolutely has the best recipes, as you seen before I love finding recipes on her blog. Today I decided to dedicate two awesome recipes I found on her blog. I saw these last week and had to make them the day I saw it ... lol! These both are amazing and believe me I'll be making these again!
First I start with dinner this was so easy and so freaking yummy!!! Cole loved it and has seconds (so did mom ... lol).

Beef Noodle Bowl from One Crazy Cookie
8 oz thin spaghetti
3 cups stir fry veggies
1/4 cup diced onions
1 Tablespoon olive oil
3/4 - 1 pound ground beef
1/2 cup Zesty Italian Dressing
1/2 cup teriyaki sauce
Brown hamburger and drain. Cook pasta according to package directions. Drain and set aside. Cut up veggies. Pour the olive oil in a skillet and add the veggies and onion,
Saute over medium heat until they are done to your taste.
ALEXIS NOTES: I also used a little extra noodles, next time I will use the whole wheat (I ran out this time). I picked up some shredded carrots, zucchini & broccoli. I used ground beef like she did (original recipe calls for steak strips). I must admit I like the ground beef :). Cole is now like Caden and on a Corn kick and since it has been since a horrible season for the farmers I've been picking it up for 4 for $1.

Next is dessert! These are absolutely fabulous!!! I must admit I loved the dough :).

Shortcut Peanut Butter Cookies by One Crazy Cookie
Shortcut Peanut Butter Cookies
Adapted from Kids Cook!
1 package yellow cake mix
1 cup chunky peanut butter (or creamy)
2 eggs
1/3 cup water
Preheat oven to 375 degrees. Combine half of the package of cake mix and peanut butter together. Add the eggs and 1/3 cup water. Mix well. Add the other half of the cake mix and mix again. The batter may get really stiff.
Lightly grease a cookie sheet. Put a small amount of sugar in a bowl, Using a cookie scoop drop dough into sugar (it is sticky dough) Roll in the sugar and place on the cookie sheet.
Dip fork in the sugar and make crisscross imprints in each cookie.
Bake for 8-10 minutes. Cookies will be lightly colored.
Makes about 3 dozen cookies.
ALEXIS NOTES: I saw her note about it being sticky so I threw it in the fridge and that helped make it to harden up a bit and was very easy to work with after that. This is a perfect ending to a delish meal!

Ready ... Set ... Pre-heat Oven ... BAKE!

I'm Ready ... I'm Ready .... Do you have the spongebob song running threw your mind now? No ... well then you're missing out on the wonderful world I call spongebrain! So just to get you on my level here it is!



Everything I need to start.
Yes that's coffee, one of the recipes called for it.

1st Layer done, yummy!

See Rick I do use my mixer!
Ok it's maybe once or twice a year but I do use it.

Look at the peanut butter cups I had to open (next time I'm finding unwrapped ones)

And be proud I didn't even eat one!I unwrapped them and threw them in the dish so I could put them in the food processor. I find Cole lining them all up in the pan to be in neat rows. Yup he is a chip off the OCD block!

You can't see the peanut butter drizzle or the chocolate drizzle under the peanuts.

So I made a second dish for the bake off a really cool peanut butter cookie with peanut butter surprise inside. Yeah after making one batch of those I said the heck with it and threw it in a pan to make bars, not pretty but they smell good at least. I'm hoping these dream bars will take the winning spot. A note for next year stick with JUST one item, stop over doing it with more then one! Do the cookies on the weekend, I was going to make them yesterday, but wanted them to be as fresh as possible, as you can see it is 10:30pm and I'm finally fished. And the third and most important note, is nuts are great to cover lumps and bumps! Hmmm IDEA I could make clothing out of them since they are so good at hiding lumps and bumps, every girls dream. Now only to get the animals and crazy peanut lovers away and stop eating your clothing. May be good in for some people, but I think me and my bubble will stay just fine with out them!

Alright I'm done, I've baked and resisted eating chocolate I think I better head to bed before there are little corners cut out of the bars :). Fingers crossed I win, I so need it ... Ok playing the sympathy card is low but come on! Ha-Ha
