Make Something Monday ... Hashbrown Pie

Make Something Monday

Yummy breakfast time again! This is a wonderful recipe I found on the Internet and the boys just loved it. So easy and I actually had everything in the house. Enjoy!

All you need
Cut up the bacon
I find it easier if it's cut up then in strips
Hash browns in the pan
Add Onions and Green Peppers
In bowl add eggs
Add Milk
Add eggs to hash brown mixture
Add the bacon
Add the cheese
Yummy all melted and good!

Hash Browns Omelet


Ingredients
4-6 slices bacon
2 cups frozen hash browns (or shredded or chopped potatoes this is totally up to you and is adaptable leftover baked potatoes w)
1/2 cup chopped onion
1/2 cup chopped green pepper
4 eggs
1/4 cup milk
1 cup grated cheese (again your choice but we like Velveeta or cheddar)
salt and pepper
Directions
1. Cook bacon in heavy skillet until crisp.
2. Remove from pan and set aside, crumble when cool.
3. In bacon drippings in same skillet, mix potatoes, onion and green peppers.
4. Cook over low heat until underside is crisp and brown.
5. Blend eggs and milk and pour over potato mixture.
6. Top with cheese and bacon.
7. Cover.
8. Cook over low heat until egg is done, about 20 minutes.
9. Cut into wedges and season with salt and pepper.

  7. Now that I think of it I have a similar recipe using sliced potatoes instead of the hash browns. It is so good! I see I made a typo... I meant- This looks so good :)
