Alton Brown's Peanut Butter Fudge

Well a few days ago I showed a peanut butter fudge I made, then a card came in the mail with a very nice gift card from one of Rick's cousins and Rick suggested I make something ... hmmm now I think about that statement I so got played again he gets to reap the rewards and I have to make the treats ... hmmm ok deal with that later .. lol!  So I wanted to make the peanut butter fudge again but then I came across this recipe from Alton Brown that was almost similar but the way to make it in the microwave had an extra step putting saran wrap on it.  I thought well why not try it, it actually came out a little smoother.  I didn't taste (due to the diet) but my tester tried and said they really liked it.


Ingredients

  • 8 ounces unsalted butter, plus more for greasing pan
  • 1 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar

Directions

Combine the butter and peanut butter in a 4-quart microwave-safe bowl and cover with plastic wrap. Microwave for 2 minutes on high. Stir and microwave on high for 2 more minutes. (Use caution when removing this mixture from the microwave, it will be very hot.) Add the vanilla and powdered sugar to the peanut butter mixture and stir to combine with a wooden spoon. The mixture will become hard to stir and lose its sheen. Spread into a buttered 8 by 8-inch pan lined with parchment paper. Fold the excess parchment paper so it covers the surface of the fudge and refrigerate until cool, about 2 hours. Cut into 1-inch pieces and store in an airtight container at room temperature for up to a week.

Rudolph the Red Nose Reindeer "Peanut Butter Fudge"

We were invited to Christmas party this past weekend and I was able to try out a bunch of fun things I've found on Pinterest.  This is one that didn't make it to the party due to my Peanut Butter Fudge didn't set up so I thought I'd show this one first!  

I started with my Microwave Peanut Butter Fudge recipe I posted last December.  This is a simple one to make and my MIL has actually requested that I make it and send it as her gift again this year!



Ingredients

1cup of butter
1cup peanut butter
1tsp vanilla extract
1lb powdered sugar

Directions

Prepare a pan by covering it in wax paper and spraying with nonstick cooking spray, leaving at least one inch overhang of wax paper around all edges. You can use an 8×11” baking sheet with a one inch rim or an 8×8” square pan if you want thicker fudge.
In a microwave safe bowl, combine butter and peanut butter. Microwave on high two minutes, stir and microwave two additional minutes. Stir in vanilla and powdered sugar. Mix with a wooden spoon until well combined and smooth. Pour into prepared pan, smooth, and cover with another sheet of wax paper pressed directly against the surface of the fudge. Refrigerate at least two hours and cut into one inch squares.


NOW I made my fudge in my Cornbread Silicone pan, if you do not have one of these make in a circle and then cut like a pie to get triangles.  I say invest in one of these pans if you don't already have one!  I found this idea on Mom Lid Musings.


For the Reindeer:

Peanut Butter Fudge (in a triangle shape)
Ribbon
Googly Eyes
Red Pom Poms (or red dots)
Plastic Bags (Or ziplock and cut the top off)
Glue

Take your fudge put it in a plastic bag.  I took some tape before I added the ribbon to make sure the bag would stay closed.  I took my Elmer glue stick and added some googly eyes and then added a red pom pom for a nose.  Tada all done!  The longest part of this was waiting the 2 hours for the fudge to sit up.

Easy Fudge & Caramels

First off on the list of goodies made are some super easy ones that ALL could be made in the microwave!  Yes it was a easy type of goodie year!
I had 3 good ones and ONE epic fail .. Yes I took a picture of the fail.
This was a very easy and yummy recipe done in the crockpot! This skinny Holiday Fudge is a must!

And the epic fail … I thought it was going to turn out I was so excited it tasted so yummy but all I got was goo!  Yup it happens and I must post.  Sadly this Microwave Pumpkin Fudge didn’t turn out and the worst part is I doubled it so I would have enough.
