Spiderman Cupcakes for Birthday Dreams

Next on my cupcakes list to do for Birthday Dreams (bringing cupcakes to homeless kids) was for Spiderman cake .. WELL what I wrote down was Spiderman what it was suppose to be was Batman.  I felt like such a boob, so have to much on my plate ... ugh.

What you Need:
Cupcakes
Frosting
Spider Cookie Cutter (I bought mine at Halloween from Michael's)
Spiderman cookie Cutter (I bought mine on Ebay)
Black Modeling Chocolate
Red Modeling Chocolate
White Modeling Chocolate

I found a recipe for Moist Chocolate Cupcakes on Food.com and made them, they smelled so good! This was a great easy and yummy recipe!


While the cupcakes were cooling, I found a recipe for Easy Chocolate Buttercream Frosting on Good Cheap Eats. Another super easy and yummy frosting, I found it a little thick so I added extra heavy cream to make it easier to pipe onto the cupcakes.


For those who have not seen my previous post on how to make modeling chocolate (aka candy clay) all pictured but the orange.

Modeling Chocolate
12oz Candy Melts
1/4 Cup light corn Syrup

Melt your Candy Melts in microwave (mine takes about 2 minutes). Stir them to become smooth and add the corn syrup.  It will become thick and form a ball.  Wrap in plastic wrap and let it sit out and dry.  Takes a few hours or over night is best. (Alexis note: I found to roll this out use a little powder sugar (like you would do with flour), also you have to kneed it a little like you would dough to make it easy to roll out).



For the Eyes I cut a small red circle from the candy clay.  I then took the inner eye and made white eyes that I attached to the red.


For the spider's I used a spider cookie cutter to cut out black spiders.



I attached the Spiderman Eyes and Spiders to the top of a frosted cupcake.


I box them up in the great clear cupcake boxes I picked up on Amazon.
And deliver them to the shelter.

Minecraft Birthday Party ... Minecraft Creeper Cupcakes

Today is Cole's 10th Birthday!  I wanted to surprise him at school with cupcakes for his friends.  Going with our Minecraft theme, I wanted to make Creeper Cupcakes.  I saw a version on Candy Bar Cupcakes that I took and ran with.


I started with a One Bowl Chocolate Cupcake recipe, I filled these cool brick square cupcake liners (found on Amazon).  I wanted a square cupcake so I found a square cupcake pan also on Amazon.


NGREDIENTS:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
2.In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
3.Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.



After the cupcakes had cooled I frosted them and added the fondant shapes.  I have learned that everytime I make my Sturdy Butter Cream Frosting and my Rolled Buttercream Fondant I have a ton left over.  Instead of throwing it away (yes I've done that before) I now freeze it.  

What you Need:
Square Cupcake Liners
Square Cupcakes
Frosting (colored green)
Fondant (colored black)
Square cookie Cutters (small and medium)

So today I pulled out my lefter over frosting and fondant and colored it the colors I wanted (using Wilton Icing Color).  I frosted the cupcakes Green.  I rolled my fondant using my small square cookie cutter I made the eyes.  For the mouth I cut a medium square, then took my small cookie cutter to cut the the top left and right and then the bottom middle.  I googled the creeper image and printed it out so I could reference it while I did mine.



These were actually easier then I thought, and I love how they turned out.

Chocolate Cupcake Turkeys & Candy Corn Mix

For some last minute treats I made these for the boys classrooms.  Pretty easy to make and you can make these up for tomorrow for the kiddos!

First I wanted to make another type of Turkey Cupcakes, this time I started with Chocolate Cupcake recipes.  Then I decorated them to look like Turkey's.


Mom's Chocolate Cupcakes (not mine but someone's hey it was the title):

Ingredients:

1 1/2 cups flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1/3 cup cocoa powder
1/2 cup oil
1 cup water
1 teaspoon vanilla extract
1 tablespoon vinegar

Directions:1. Mix all ingredients together until moist and well blended.
2. Put in cupcake cups and bake for 20-25 minutes at 350 degrees F.
3. Frost with your favorite icing.
4. To make a layer cake, double the recipes and put in 2 round cake pans.
5. Increase baking time to about 35 minutes or until a toothpick inserted in the center comes out clean.

I followed along steps I found for Totally Terrific Turkeys.

Step 1: Frost Thin Base Layer
Step 2: Add "Globs for head" you can add one for tail I didn't
Step 3: Add Candy Corn Tail & Beak
Step 4: Add Eyes and Sprinkles


And we of course had to do one more recipe so I made up some Candy Corn Mix recipe found on I Heart Nap Time (She also made cute bags, I used the holiday ziplock bags).
5 Cups Honey Nut Chex
4 Cups of Mini Pretzels (I used the bag of large I had)
1 pkg of Vanilla candi Quick (I used Wiltons Melts)
1 Cup Candy Corn (found in my bulk section)
1 Cup Candy Corn M&M's (I couldn't find used Reese's Pieces)

Mix all your dry ingredients in a big bowl. Melt the candi quik in the microwave for one minute and pour over your mix. Stir it around and then lay on wax paper to dry.

There you go some quick and easy recipes that can be made up and even given as gifts!

Leftover Turkey & Cupcakes!

I found this amazing recipe to use the last of my turkey.  I used my hard apple cider instead of beer (it’s my special treat every once in a while .. lol). I used Agave instead of honey.  Cole liked this so much that he had me put it as his warm up the next day at school.  The Turkey Chili with Whole Wheat Orzo is one of the best chili’s I have made.

I took this S’Mores Cupcake recipe and tweaked it since I didn’t have time to make the pretty frosting.  Ok the thing is I didn’t have a kitchen torche and Rick’s Man Cave scares me to go out there to get his torch.  I did the base the same with the graham cracker & chocolate cake part.  Just used a butter cream frosting instead (see above recipe).
