As many of you know my obsession with coffee, but I also love tea. My mom got me some loose leaf teas a while back. I love going to the shops and smelling all the amazing different flavors. I've always been an earl grey fan, just the smell of it. I was so excited when Golden Moon Tea offered for me to test some of the Finest Loose Leaf Teas that they have.
The flavor that I get to try and you get a chance to win is Tippy Earl Grey tea that has the most wonderful hint of lavender. It's so aromatic when your steeping it that I almost couldn't wait for it to finish. I love loose leaf teas they just have so much more flavor and body to them, and you don't have a soggy bag that stupid paper tag always falls off and ends up floating in my drink (come on I can't be the only one this happens to). My mom picked me up a Tea Infuser awhile back, it makes making loose leaf tea so easy!
Of course I couldn't just show you a cup of tea, I had to show what else loose leaf tea is good for. You know I just have to bake, you need a cookie with your tea right? A few days ago by the grace of God I came across Earl Grey Tea Shortbread recipe. Oh yeah I knew it was meant to be since I was posting the Tippy Earl Grey tea giveaway this weekend.
Thank you Lisette Fancy Frugalista! for this amazing recipe and don't forget to pick up some Tippy Earl Grey tea so you can make these amazing cookies and of course pour a cup of tea to go with it!
INGREDIENTS
- 2 cups all-purpose flour
- 2 tablespoons loose Tippy Earl Grey tea
- 1/2 teaspoon salt
- 3/4 cup confectioners' sugar
- 1 teaspoon pure vanilla extract
- 1 cup (2 sticks) butter, room temperature
DIRECTIONS
In a food processor, pulse together the flour, tea, and salt, until the tea is just spotted throughout the flour. Add the confectioners' sugar, vanilla, and butter. Pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 1/2-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 30 minutes.
Preheat oven to 375 degrees F.
Slice the log into 1/3-inch thick disks. Place on parchment or silpat lined baking sheets, 2 inches apart (2 probably needed depending on size of sheets). Bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.
Pour yourself a cup of Tippy Earl Grey tea and eat a cookie!
