Rick wanted something different then the usual that I have been making so I found some pork chops on sale at Winco so I picked them up and had to find something to do with them! Thanks to Google I found a yummy marinate. I started the marinate early since it was Tuesday and that is when our friends come for dinner. Sadly later that day she had cancel and I already had the chops marinating so I had Rick put them on the grill and knew I would use them again later that week. My little helper Caden had to get into helping to, man I’m telling you when he gets married the lady better thank me for his cooking skills … lol

As many of you may have guessed while I’ve been trying to cut down on calories and watching what I serve the family. So beef has not been on the menu for sometime. The lean beef is always so spendy so I buy turkey instead. After SEVERAL comments from Rick that he wanted beef I did some searching and found these. Very yummy and not to bad on your push on the muffin top either!
Rick LOVES meatloaf so I made this HG's Big Beef 'n Bacon Meatloaf. I just love her site! And for you pig lovers (Amy) I used turkey bacon!

Sunday AM I woke up and thought I shoved a pillow up my noise and throat! I can’t breath and my throat feels like a cat scratched it and left me it’s fur along the way. Let’s just say I’m not too motivated and moving around that much. I sadly had to cancel a playdate. I would have love to gone just to let the kids play so I could slouch in a car but I couldn’t even make it to the car . UGH
So while I’m sitting her not able to breath or sleep I thought I’d post some comfort food. It’s been rainy and cold here in the PNW so these have been perfect. I know some of you are in a heat wave but Washington is proving to be a rainy state .
First off we have Cream of Chicken Wild Rice Soup, that I loved. Rick not so much (I know as usual), the kids liked it.

And I made these for dinner, I know they are technically a breakfast but I love doing these little cupcake ideas for dinner. Plus the boys love eggs anytime . Broccoli-and-Bacon Egg Cups were super easy and yummy!

Still on my mission to cook healthy tasty meals for the fam and my love of SkinnyTaste.com I have come across this yummy Chicken Rollatini with Spinach alla Parmigiana. Now me pounding chicken and make up cute little roll ups so is not beautiful as her’s but with some toothpicks and a prayer it doesn’t look totally horrible. BUT it did taste amazing!

Then my dad picked me up a rotisserie chicken at Costco. So on the search I went for a weight watcher recipe that I could use it in and found Easy Chicken Enchiladas. We got home late from the baseball game & visiting my dad so I whipped this up in minutes and dinner was served 40 min later!

I promise you will stay there for almost every meal like me.
We start with soup that was perfect to have before we went to swim class. I like doing soups or crockpot recipes on those days to make it easy to go. I found this yummy Slowcooker Cheeseburger Soup was a hit with the boys! Mom even enjoyed a bowl of it!

As you all know the theme around here is reduced calories and food that everyone loves. YES that is a hard thing to do in this house. I actually got the BEST compliment yesterday I commented on how our food is on the healthy side, Rick said hun your food isn’t healthy … hehe oh yes it is boy you’ve been eating healthy for 3 weeks! First off was a yummy rice that has Peas, and you who know me know I HATE peas. Yup it was good and I couldn’t taste the peas . Enjoy this is to fill you up! Sicilian Rice Ball Casserole will be sure to be a house pleaser.

As many of you know by now I’m really trying hard to make our meals better with calories and watch what I put in my mouth (and the amount I shovel in ).
Every morning I make Cole something warm to start him off, the other morning he asked for Blueberry Pancakes so I whipped these up. They were very yummy and great with the applesauce and whole wheat. The boys ate them right up.

Happy Monday everyone, it’s been a busy weekend of nothing … lol. It was one of those weekends I just wasn’t motivated on Saturday, so Sunday it was a pack it all in kind of day … hehe! Enjoy!
Well today is tax day … YIKES! I’ve never been one to worry about tax day I usually do my taxes early and take my refund and go on my merry way! Then came this year since working from home and being a “Consultant” I have to pay taxes. So I was prepared I thought, then I did them and as the pay back increased more and more so did my blood pressure and my need to curl into a fetus position. Then the total came … HOLY CRAP I owe as much as a small car. How the HECK did that happen! So let’s just say I’m not doing the best, I’m trying to work different situations to find how I can improve for next year. Pray for me I’m a stress eater!
So now to some good food that is low if fat but NOT in taste! From my NEW favorite website SkinnyTaste. For you Weight Watcher fans this site is amazing with recipes and points. I’m trying to eatless and watch my calories .
Our first adventure down Chicken Lane is Crock Pot Chicken Taco Chili which I served over brown rice. It was a little spicy for the kids but great for adults.

<p>This was a great dish that cooked all day in the crockpot and was ready when we got home. I topped with fat free sour cream and cilantro.</p>
This recipe had a lot of steps to it but was worth it. The recipe called for this to made on the stove but I threw the chicken part in the crockpot and let it go for a few hours on low.
