Being on this diet for so long I need to find new ways to eat protein and low carb items. I've been seeing these Pepperoni Chips on Pinterest and wanted to give them a try. Now mine didn't turn out bright colored liked theirs did but they sure were tasty (I have a feeling it is because I used the Turkey Pepperoni). It had a great crunch to it that helps when you need a little something salty and crunchy!
24 ounces pepperoni slices
salt

- Line a Microwave-Safe Plate with several sheets of papertowel. Place the pepperoni slices in a single layer.
- Microwave for 30 - 60 seconds (depending on the wattage of your microwave). The pepperoni slices should be nice and crispy and most of the grease absorbed on the papertowels.
- If any in the center are not crispy looking and still feel soft, microwave more in 15 second increments.
- Salt if desired. (I skipped this)

LOL.. when I saw this on my blog roll on my blog, I thought it said peppermint chips... now I see it is pepperoni chips. The Hubs would love these.

ReplyDeleteI am trying these! We love pepperoni around here and I always buy the turkey kind. I am with you and would omit the salt. Pepperoni is already salty enough. Thanks for sharing! :)

ReplyDeleteI tried these not too long ago. They are very tasty, but a little too salty...might have been the kind of pepperonis I had used though.

ReplyDeleteI am so proudof you and your weight loss. I too try to live a low carb lifestyle and sometimes fall of the wagon but I get back on. You are an inspiration. I am amazed at how you can make goodies and not eat them. Have you tried the Miracle Brownies? Yummy!! If not Google them. Keep it up you are looking so fit and healthy!!!
