Rio 2 was released a few weeks back and I pre-ordered it on Amazon (thank you Prime for your discount, maybe I should say thank you Dad since he pays the Prime .. lol). My best friend and I have a movie night with our family at her house and I love to bring the treats for our movie nights. Of course me and my theme's I had to make something Rio themed. I saw on Pinterest this picture of a Rio Cupcake, and thought I could so do that!
What you need:
24 Cupcakes (I used a new recipe see below)
Oreo Cookies (2 Sides with cream only)
Reese's Pieces (2 Brown and 1 orange)
Frosting tinted Blue (Used my Sturdy Buttercream frosting)
What you do:
Tint your frosting Blue, I used AmeriColor Electric Blue Gel Paste to get the right blue. Once the cupcakes have cooled frost them with your blue frosting. I used my Open Star pipping tip to look like feathers.
I then twisted off my Oreo's be careful so you get a clean Oreo with all the cream on one side (you can eat the cookie with no frosting or throw away like I did so I wasn't tempted or crush them up and put on ice cream ... that would be my go to why they had to go in the garbage .. lol). Line up all your Oreo's cream side up and add one brown Reese's Pieces to be your eye. I placed them in different spots to make the bird look like he was looking at different things (yes I'm crazy and think about things like this). Take two of your Oreo eyes and add to the frosted cupcake They kind of have to overlap so make sure you place your first oreo with they eyeball giving space for the other oreo to lap over (see below pic). Your eyes go up toward the top of cupcake so you can add the orange Reese's Piece to be the beak. Place the orange Reese's Piece on it's side so it sticks out like a beak (see below pic). All done!
This recipe was featured in Sex in the City so I had to give it a try when I saw it on her blog. My taste tester's let me know they were good but they prefer my Moist White Cake recipe I use for most of my cupcake recipes.
- 1 1/2 cups self-raising flour
- 1 1/4 cups plain flour
- 1 cup unsalted butter, softened
- 2 cups sugar
- 4 large eggs, at room temperature
- 1 cup milk
- 1 teaspoon vanilla extract
First, preheat your oven to 350F. Combine your flours in a bowl and set aside, and the mix your butter and sugar until its good and soft and fluffy. Add the eggs one at a time, beating thoroughly after each egg. Next, add your 1tsp vanilla extract to your cup of milk, and alternate adding that to the mix along with the flours. Mix thoroughly until everything is combined.
Fill you cupcake cases three quarters full, and bake for around 20 minutes, or until a toothpick inserted into the center of the cupcake comes out clean.
