Pizza Palooza ... Macaroni n' Cheese Pizza

Before you make a funny face just think of it your yummy gooey favorite mac and cheese served on your favorite pizza crust!  Ok yes it may sound weird but the boys thought it was a hit!  A big Thanks to Kim from Makin' it Mo Betta for this Macaroni n' Cheese Pizza


Macaroni and Cheese Pizza 

Macaroni and Cheese (or out a box)
1/2 cup shredded cheddar cheese
Homemade pizza crust (Or Premade pizza crust)
Bacon (or Bacon Bits)

Prepare macaroni and cheese and pizza crust.  I pre-baked the dough, then spread macaroni and cheese over the crust.  Sprinkle the 1/2 cup shredded cheese and bacon over the top.  Pop back into the oven until everything is nice and melty and crust is completely done.




Macaroni n' Cheese (recipe I used)
INGREDIENTS:
8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
1/2 cup grated Parmesan cheese
3 cups milk
1/4 cup butter
2 1/2 tablespoons all-purpose flour
2 tablespoons butter
1/2 cup bread crumbs
1 pinch paprika
DIRECTIONS:
1.Cook macaroni according to the package directions. Drain.
2.In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
3.Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
4.Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.


Homemade Pizza Dough (recipe I used)
INGREDIENTS:
1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45
degrees C)
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt
DIRECTIONS:
1.Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
2.Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
3.Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

Pizza Palooza ... Meat Lover's Pizza

We continue our Pizza Palooza with a meat lover's pizza the boys made.  I made a simple pizza dough that I found on Smitten Kitchen.  We topped their pizza's with a meat lover's dream.  The boys just love when we do pizza night and they get to make it all by themselves!

Meat Lover's Pizza
Pizza Dough (see recipe Below)
Pepperoni or Salame
Canadian Bacon
Ham (my dad smoked a ham)
Cheese
Pizza Sauce

Roll out your dough to the thickness you like.  Add pizza sauce, then top with favorite toppings and your cheese.  Bake at 350 for 10 to 15 minutes.

Pizza Dough
Ingredients:
1 1/2 cups flour (can replace up to half of this with whole wheat flour)
1 teaspoon salt
3/4 teaspoon active dry yeast
1/2 cup lukewarm water (may need up to 1 or 2 tablespoons more)
1 tablespoon olive oil


ALEXIS NOTES: I used the 1/2 whole wheat always trying to get a little in :).

Steps:
Stir dry ingredients, including yeast, in a large bowl. Add water and olive oil, stirring mixture into as close to a ball as you can. Dump all clumps and floury bits onto a lightly floured surface and knead everything into a homogeneous ball.

Lightly oil the bowl (a spritz of cooking spray perfectly does the trick) where you had mixed it — one-bowl recipe! — dump the dough in, turn it over so all sides are coated, cover it in plastic wrap and leave it undisturbed for an hour or two, until it has doubled in size.

Dump it back on the floured counter, and gently press the air out of the dough with the palm of your hands. Fold the piece into an approximate ball shape, and let it sit under that plastic wrap for 20 more minutes.

Sprinkle a pizza stone or baking sheet with cornmeal and preheat your oven to its top temperature. Roll out the pizza, toss on whatever topping and seasonings you like.  Bake it for about 10 minutes until it’s lightly blistered and impossible to resist.

Pizza Palooza ... Dessert PB Cookie Pizza

As my husband says why not have a restaurant that starts with dessert then let's you have dinner!  So why not start out my Pizza Palooza week of recipes with a PB Cookie Pizza I found on Urban Jane.  This was a simple one to make and was a hit with the kids!  I took a sniff and it sure did smell good (yes I'm being a good girl and sticking to my diet).

I had Reese's Piece's on hand from a previous recipe that I needed yellow candy and the only way to find them was to buy these and pick them out ... lol yes it works but hey I then had it on hand for this recipe!


Ingredients:
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 tsp vanilla extract
1 & 1/2 cups all purposed flour
2 cups miniature marshmallows
2 cup semi sweet chocolate chips (recipe called for 1 cup but we both used 2 cups)
1 cup Reese's pieces (or any other toppings you like)

Directions:
- in a bowl, cream butters & sugars together. Beat in egg & vanilla. Stir in flour & chocolate chips until well blended.
- spread dough onto greased pan. Bake at 375 degrees for 12 minutes. Sprinkle with marshmallows & Reese's pieces. Bake 5-6 minutes longer or until lightly browned.
-let cool on baking sheet

Party Food .... Pizza Wonton Cups

If you have been with me for sometime you know I have a slight obsession with recipes using wonton wrappers.   They make great portion sized and most times the recipes are low fat, NOW this one is not on that side but it was a hit with our guest and my boys!

Looking for an easy recipe that will get the ooh's and ahh's and always be a crowd pleaser check this one out!  I found this amazing on The Pinterest Kitchen.

 
What you Need:
  • 1 pound of sausage out of the casings (any kind you like)
  • ½ a jar of spaghetti sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 24 wonton wrappers
  • 1 cup of shredded cheese
Instructions
  1. In a skillet brown sausage over medium heat until no longer pink.
  2. Add the spaghetti sauce, garlic powder and dried oregano and stir.
  3. Simmer for about 8 minutes until sauce thickens.
  4. Press wonton wrappers into a greased mini muffin pan and bake at 350 for 6-7 minutes.
  5. Spoon sausage mixture into the cups.
  6. Sprinkle on shredded cheese.
  7. Bake 5-6 minutes or until cheese is melted.
ALEXIS NOTES: I like to use a double wonton wrapper (see the picture).  I used ground turkey instead of sausage it was what I have on hand and I like to use it.

Easy Kid & Adult Pleasing Recipe

Mother’s day Rick had to work during the day and the kids were dying of hungry after church so I wanted to make something quick.  I so this on Pinterest a while back and just knew I would have to make it.  The kids loved it and heck I even thought it was pretty darn tasty.  This could be a hit if you took it to any party.

What you Need:

  • Crescent Rolls (I used Reduced Fat)
  • 4 Mozzarella Sticks – Cut in Half (I used light)
  • 40 Pepperoni’s (I used Turkey)
  • Garlic Powder
  • Pizza Sauce

Take one crescent roll place 5 pepperoni’s on the top of your triangle.  Place one half of the cheese stick on top of pepperoni.  Wrap up crescent rolls and then sprinkle with garlic powder.  Bake at 375 for 12-15 minutes.  They are warm and serve them right away.

There you go took about 5 minutes to put together another 13 to bake!  Heck a quick meal in under 20 minutes!  Enjoy!

Party Snacks (Pizza, Poppers & S'Mores)

The Oscar's were this weekend so I had to bust out some yummy treats to share with my friends!

I found this amazing pizza on How Sweat Eats and tweaked it a bit. I did use my own flat bread recipe but for the life of me can't find what recipe I used so I added in the recipe she gave.

Next on the list was a Pizza Pinwheel. The recipe called for pizza dough so I made one from my favorite flour website King Arthur and next is the recipe I found on One Crazy Cookie (one of my favorite ladies).
