Pizza Buns ... Easy Meal

This weekend I found on Facebook a post from Twin Dragonfly Designs for pizza buns! I just knew the boys would love and I had everything I needed. I happened to have pizza dough in my freezer from a pizza and movie night at a friends house that was canceled but not before I had already made the dough. 


  • White bread dough (I made my own pizza dough using Recipe found on Deliacreates).
  • Tomato paste (not as runny as pizza sauce).
  • Sliced pepperoni (I used Turkey Pepperoni)
  • Top with 1 cup shredded mozzarella cheese (I had low fat cheddar I used)
Roll out your dough, top with the tomato paste (I agree pizza sauce would be too runny). If you want a little extra spice add some Italian seasoning. Top with sliced pepperoni and cheese. Roll up like a jelly roll and then slice into 1" sections. Place on a greased cookie sheet and bake at 35 for 20-25 minutes.

ALEXIS NOTES: I used a whole wheat flour for my dough, turkey pepperoni and low fat cheddar cheese.  I tried to cut out some calories where I could.

Pizza Palooza ... Meat Lover's Pizza

We continue our Pizza Palooza with a meat lover's pizza the boys made.  I made a simple pizza dough that I found on Smitten Kitchen.  We topped their pizza's with a meat lover's dream.  The boys just love when we do pizza night and they get to make it all by themselves!

Meat Lover's Pizza
Pizza Dough (see recipe Below)
Pepperoni or Salame
Canadian Bacon
Ham (my dad smoked a ham)
Cheese
Pizza Sauce

Roll out your dough to the thickness you like.  Add pizza sauce, then top with favorite toppings and your cheese.  Bake at 350 for 10 to 15 minutes.

Pizza Dough
Ingredients:
1 1/2 cups flour (can replace up to half of this with whole wheat flour)
1 teaspoon salt
3/4 teaspoon active dry yeast
1/2 cup lukewarm water (may need up to 1 or 2 tablespoons more)
1 tablespoon olive oil


ALEXIS NOTES: I used the 1/2 whole wheat always trying to get a little in :).

Steps:
Stir dry ingredients, including yeast, in a large bowl. Add water and olive oil, stirring mixture into as close to a ball as you can. Dump all clumps and floury bits onto a lightly floured surface and knead everything into a homogeneous ball.

Lightly oil the bowl (a spritz of cooking spray perfectly does the trick) where you had mixed it — one-bowl recipe! — dump the dough in, turn it over so all sides are coated, cover it in plastic wrap and leave it undisturbed for an hour or two, until it has doubled in size.

Dump it back on the floured counter, and gently press the air out of the dough with the palm of your hands. Fold the piece into an approximate ball shape, and let it sit under that plastic wrap for 20 more minutes.

Sprinkle a pizza stone or baking sheet with cornmeal and preheat your oven to its top temperature. Roll out the pizza, toss on whatever topping and seasonings you like.  Bake it for about 10 minutes until it’s lightly blistered and impossible to resist.

Bringing Treats to the Parties

We had two parties to go to this weekend.  The first was a birthday party for friends’ son.  He wanted spiderman so I found 2 recipes that were spider themed!  The first one was Saucy Spider with Hairy Leg Sticks.  Mine was a little on the fat side … yeah no comments we won’t go there but I think he was still cute! I did make my own pizza dough.

Next on the spider theme was Spider “Eggs”, I started first with EatingWell Deviled Eggs and then cut black olives to look like spiders.

And for a superbowl party I found this yummy Jalapeno Popper Dip that was so yummy I could probably eat it all Smile.

Manic Monday Meals ~ For the Love of Ground Turkey

I love putting veggies in our meals and the boys actually love broccoli & spinach and these recipes were amazing :).

I found this yummy and so beautiful recipe on For the love of Cooking. This was a HUGE hit all 12 muffin meatloaves were gone before I could put the dinner dishes in the dishwasher. The boys both had 3 helpings and Rick was popping meatloaves in his mouth like candy. I will be making this one again!

The next on our ground turkey list with a super yummy! This one didn't even make it to next day for seconds. I found this one on Park Avenue, tweeked it a bit and this is what I came up with. The recipe called for Alfredo Sauce & Pizza Dough I made my own (Click the name for the recipes I used).

Chicken Bacon Broccoli Alfredo Pizza

So it's Round Robin Time at My BFF's Amy's house, so I went threw my old post and found one of my favorite recipes that is perfect for fall and well it's been my favorite I've made in a while. Hope you enjoy!!!


On my quest to find a new pizza for each week I used my favorite search tool Google and up popped this recipe. Yet another yummy food blog pops up into my world Casse Craves, you must check her out.
This called for a premade pizza dough, but you know me :) I must make it myself. Check out this recipe I promise you'll keep using it!!

Pizza Dough for Thin Crust Pizza

  1. 1Mix a little sugar into the warm water.
  2. 2Sprinkle yeast on top.
  3. 3Wait for 10 minutes or until it gets all foamy.
  4. 4Pour into a large bowl.
  5. 5Add flour, salt, olive oil.
  6. 6Combine.
  7. 7Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
  8. 8Cover and let rest for 20-30 minutes.
  9. 9Lightly grease two 12-inch pizza pans.
  10. 10Sprinkle with a little bit of cornmeal.
  11. 11Divide dough in half.
  12. 12Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
  13. 13Try to make it thicker around the edge.
  14. 14If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
  15. 15Then spread with pizza sauce and use the toppings of your choice.
  16. 16Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
  17. 17Makes 2 12-inch pizzas.
    ALEXIS NOTES: I used whole whole for the whole recipe and added a tablespoon of honey. This was the BEST dough I have made to date! Caden kept sneaking bites of the dough.



Chicken Bacon Broccoli Alfredo Pizza

1 12-inch pre-baked thin Italian pizza crust
1/2 cup alfredo sauce (purchased, or you can get fancy and make your own)

2 cups shredded rotisserie chicken
2 cups shredded mozzarella or Italian-blend cheese
6 strips of bacon, diced
1 cup cooked broccoli

1. Preheat oven to 450 degrees. Cook bacon over medium heat to desired crispness; set aside on paper towels to drain.

2. Place pizza crust on cookie sheet. Stir together chicken and alfredo sauce in a small bowl; spread over crust, stopping about one inch from the edges. Top with cheese.

3. Bake 8-10 minutes or until cheese is melted and pizza is thoroughly heated.

4. Top with broccoli and bacon.
ALEXIS NOTES: Again I used my homemade pizza dough, Ragu Roasted Garlic Parmesan & Turkey Bacon (again the whole pack but it taste so good). Thanks to dad for the cut up rotisserie chicken. This was the BEST pizza I've ever had, Rick of course picky boy didn't like it but I love it!!!

Manic Monday Meals ~ No Yeast Pizza Dough + BBQ Chicken Pizza

Manic Monday it is, this weekend even though we barely went out was busy with us cleaning and going threw items. Today my parents will take the kids to the fair and I'm going to meet up with them after work. It's going to be busy busy around here!

As many of you know Pizza is Friday night around here and I love to find out different types of pizza. The recipe called to use a refrigerator pizza dough but I couldn't resist trying this recipe and I'm glad I did it was super yummy :).
No Yeast Pizza Dough
2 1/2 c. flour
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
3/4 to 1 c. water

Mix dry ingredients. add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add more water.

The dough will be soft, not sticky. Knead on a floured surface for 3-4 minutes.

Bake at 400°F for 15-25 minutes.

ALEXIS NOTES: I used whole wheat flour and it tasted delightful.

BBQ Chicken Pizza (found on Ma, What's for Dinner)
2 boneless skinless chicken breasts, cooked and diced
2 1/2 teaspoons olive oil
8-10 slices bacon, cooked and broken into pieces
1 small onion chopped
2 cloves garlic
1/4 cup red wine vinegar
1 cup ketchup
1 8 oz can tomato sauce
1 teaspoon dried mustard
1/4 cup brown sugar.
1 Tablespoon Worcestershire sauce
pizza dough or one store bought dough
1/2 cup chopped mushrooms
1 jalapeno pepper, seeded and sliced thin
1/4 cup chopped cilantro
2 cups shredded mozzarella cheese
Preheat your oven to 425 degrees.
In a medium saucepan heat olive oil over medium heat. Add half of the onions and allow to soften, about 5 minutes. Add in garlic and cook for an additional minute or two. Season with salt and pepper. Deglaze the pan with the vinegar being sure to scrap up all the good browned bits on the bottom.
Next add in your ketchup, tomato sauce, mustard, molasses, and Worcestershire sauce. Turn the sauce down and allow to simmer for about 10 minutes (let it simmer while you get everything else ready.)
Lay out your pizza dough and stretch it to fit a baking sheet. Stab it with a fork a few times (so it won't puff up in places) and bake for 8-10 minutes. Remove from oven and spread a thin layer of sauce leaving a one inch border around the dough. Arrange your chicken, mushrooms and onions (if desired) neatly around the pizza dough. Then arrange jalapeno (I only put this on a little edge of the pizza). Sprinkle with chopped cilantro. Top with plenty of cheese and sprinkle the bacon over top. Return to the oven and bake 8-10 more minutes or until it is heated through and the cheese is melted.
ALEXIS NOTES: I used turkey bacon, only had apple cider vinegar, skipped the mushrooms and the jalapeño pepper. Used the whole wheat pizza dough :)
