When I read about this I just had to try it! Rick loves meatballs and I just knew it would be a HUGE hit with him and it was. You always know when a recipe was good, no left overs left :)

Meatball Sub Casserole
Ingredients
Meatballs:
1/3 cup chopped green onion
1/4 cup seasoned bread crumbs
3 Tbs. grated Parmesan cheese
1 pound ground beef
------------------------------------------
1 loaf Italian bread, but into 1 inch slices
8 oz cream cheese, softened
1/2 cup mayo
1 tsp. Italian seasoning
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1 jar (28 oz) spaghetti sauce
1 cup water
2 garlic cloves, minced
Arrange bread in a single layer in an ungreased 13x9x2 inch baking dish (all of the bread might not be used). Combine cream cheese, mayo, Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 cup mozzarella. Combine sauce, water and garlic; add meatballs. Pour over cheese mixture; sprinkle with remaining mozzarella. Bake, uncovered, at 350 degrees for 30 minutes or until heated through.
NOTE: Do not use light or fat-free mayonnaise! ... Ok so I only had light and used it, it wasn't bad but I'm sure it would have been better withfull fat! :)

You could use olive oil instead of the mayo and it would work fine.
