Well it was a low key weekend here, Rick had to work both days so we didn't really do much. Sorry today it's a short post, I'm having a killer headache ... ugh! Much Love to you all!

Macaroon Kisses Recipe
Ingredients
- 1/3 cup butter, softened
- 1 package (3 ounces) cream cheese, softened
- 3/4 cup sugar
- 1 egg yolk
- 2 teaspoons almond extract
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 5 cups flaked coconut, divided
- 48 milk chocolate kisses
- Coarse sugar
Directions
- In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in 3 cups coconut. Cover and refrigerate for 1 hour or until dough is easy to handle.
- Roll into 1-in. balls and roll in the remaining coconut. Place 2 in. apart on ungreased baking sheets.
- Bake at 350° for 10-12 minutes or until lightly browned. Immediately press a chocolate kiss into the center of each cookie; sprinkle with coarse sugar. Cool on pan for 2-3 minutes or until chocolate is softened. Remove to wire racks to cool completely. Yield: 4 dozen.
I found this recipe at Winco in the bulk isle when I was looking for coconut (believe me the cheapest way to go). I then found it it on Taste of home so I didn't have to retype it :).

So I went to the woman's ministry meeting for the year and guess what I did. I signed up for once a month I will be making dinner for the youth group Wednesday nights. So guess what I'm doing tomorrow making spaghetti for 30 YOUTH!!! OMGosh yup I'm going to be cooking it until I die tomorrow! Wish me luck! Happy Wednesday everyone!
OOOO i luv macaroons! i dont make them cuz i would eat them all B4 i bake them LOL i have a huge weakness for coconut! if any form! i r helpless when it comes to the stuff! I love coconut and have made a variation of that recipe! Yum! Once I made homemade Mounds Bars, but I have som many cookbooks, I haven't found the recipe again :-(

Glad you liked your women's ministry class, but I agree with Daffy - you signed up for something else??? You need to make sure you REST some!! You are going to make yourself sick. Those cookies look awesome, I make macaroons, too, but I do it the easy way by getting a mix from King Arthur flour catalogue and adding stuff to it, they are SO good.
