Ingredients
- 3 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 3 cups chopped cooked chicken
- 1 (4-ounce) jar pimientos, chopped
- 1 (8 ounce) can cream of chicken soup
- 1 (8-ounce) can mushroom soup
- 1 cup chicken broth
- 6 lasagna noodles, cooked and drained
- 6 ounces shredded mozzarella
Directions
Preheat the oven to 350 degrees F.
Heat the butter in a large saucepan over medium heat. Add the onions and green peppers and cook, stirring occasionally, until they are soft and translucent, about 15 minutes. Add the chicken, pimientos, mushroom soup, and chicken broth. Simmer the mixture until the flavors blend and the sauce thickens slightly, about 5 minutes.
Spoon about 1/3 of the chicken mixture into a medium baking dish. Arrange 2 of the noodles over the chicken; repeat layers of chicken and noodles twice more. Top the lasagna with cheese, cover with aluminum foil and bake for 20 minutes. Uncover and bake until thecheese is nicely browned, about 10 minutes. Remove the lasagnafrom the oven and allow it to set for 5 minutes, then serve.

ReplyDeleteI've put a lot of different ingredients in lasagna, but I don't think I've ever added chicken!
That sounds so easy! I think I have everything except the pimientos and the noodles...I might have to try this one soon! :-)

ReplyDeleteI might have to try this one sometime. not sure if hubby will eat it or not.. he will try anything once usuallly depending on what it is... sometimes if it sounds gross he wont even touch it.

ReplyDeleteI will definitely give this a try. Lasagna is my family's favorite dinner of all time! They never seem to get tired of my lasagna, lol! In all fairness with me, I always try to make each lasagna recipes really distinct from the other. I think it makes it more interesting which makes our dinner more fun :)
