Pizza Meatloaf with Ranch Roasted Red Potatoes

Next was a requested meal of meatloaf and potatoes. Over the years I've done SEVERAL different versions of meatloaf. This past week I found an amazing recipe on .... YES you called it Drizzle Me Skinny for Pizza Meatloaf. My husband actually liked it so much he has asked that we do it again soon. To go with the meatloaf I found a skinny Ranch Roasted  Red Potatoes on Laaloosh that was really tasty also.


Pizza Meatloaf:
Ingredients
  • 1.5lbs raw extra lean ground beef
  • ½ cup diced peppers
  • ½ cup diced onion
  • ½ cup panko bread crumbs
  • ⅓ cup reduced fat shredded mozzarella
  • ⅓ cup pizza sauce
  • 2 tsp italian seasoning
  • 20 pepperoni slices, cut into small pieces (56g)
  • Topping
  • 2 Tbsp pizza sauce
  • ¼ cup reduced fat shredded mozzarella
  • 15 pepperoni slices (42g)
  • Sprinkle of italian seasoning
Instructions
  1. Preheat oven to 350F, line a baking sheet with parchment paper (use a baking sheet with raised edges as there will be grease from your beef as it's cooking)
  2. Cut your 20 slices of pepperoni up into small pieces.
  3. In a large bowl mix all of your ingredients together using your hands (except topping ingredients)
  4. Form into a log shape, approx 10 inches long.
  5. Bake in oven for 55 minutes, remove from oven and spoon your 2T pizza sauce on top. Add cheese and top with pepperoni slices and seasoning. Return back to oven for 15-20 minutes.
  6. Let cool for 5 minutes then cut into 8 slices. Each slice is 4sp or 4pp
  7. *Note, you can cut slices thinner for more of a yield, there is 34 smart points in total in recipe based of my ingredients, so if you cut into 10 slices you can do the math.. Feel free to add extra 0 point toppings such as mushrooms..
  8. * I added pictures of the nutritional info for both my pepperoni and my cheese so you can compare with a similar brand.
ALEXIS NOTES: I used Turkey pepperoni.

Ranch Roasted Red Potatoes:

Ingredients

  • 12 oz red potatoes, washed and quartered
  • 1 packet Ranch Dressing Dry Mix
  • Non fat, olive oil cooking spray
  • 1 tsp salt

Instructions

  1. Preheat oven to 425 degrees.
  2. In a large bowl add potatoes and spray lightly with the cooking spray. Then, add in the Ranch mix and salt, and toss well to coat each potato piece evenly.
  3. Spray a baking sheet with non stick cooking spray and spread out potatoes evenly on sheet.
  4. Bake in oven until potatoes are cooked through, and edges start to turn very dark brown, approximately 20-25 minutes.

Skinny Meatloaf ... Juicy Meatloaf (FMD - Fast Metabolism Diet)

Another Sunday Supper Meal Idea ... yes I was on a Meatloaf kick for a while. The boys are meat eaters so I'm always on the hunt to find ways to bring it to them on the lighter side!

Next on my hunt for a yummy meatloaf (or in my case a Turkeyloaf) was found on the Fast Metabolism Diet website that I made, it can be used for phase 1 and 3.  This was a simple dinner to make I steamed some broccoli to go with mine, the boys of course had scallop potatoes (no carbs for this girl this time).


Phases 1 and 3
Serves 4
Prep time: 10 minutes
Total time: 40 to 45 minutes
1 pound lean ground beef
2 egg whites
1/2 cup old-fashioned or rolled oats
1/4 cup plus 2 Tbls. sugar-free ketchup (or Homemade Sugar-Free Ketchup)
1/4 cup finely minced onion
1 tsp. sea salt
1/2 tsp. black pepper
Preheat the oven to 375 degrees F.
Mix all ingredients (except the 2 tablespoons of ketchup) in a large mixing bowl until well combined. Lightly press the mixture into an 8-by-4-inch loaf pan. Spread the remaining ketchup on top. Bake for 30 to 35 minutes (the inside will no longer be pink). Let the meatloaf rest for 5 minutes before slicing.
Serve with Phase-appropriate veggies. For Phase 1, serve with 3/4 cup brown rice per person. For Phase 3, be sure to add a healthy fat, like a side salad topped with 2-3 Tbls. salad dressing.
ALEXIS NOTES: I used Turkey since that is what I had on hand, I found organic ketchup that I used and a red onion (again what I had on hand).

Skinny Meatloaf ... Cheeseburger Meatloaf Pie

Another Addition of Sunday Supper Meal Ideas ... Meatloaf is always a hit with my boys! This was no exception, it was so perfect and low fat! Enjoy, hope you give it a try for your Sunday Supper.

On to another meatloaf that is tasty and will allow you to watch your calories at the same time!  I love Emily Bites and she has knocked it out of the park with this Cheeseburger Meatloaf Pie.  This has so much flavor and was a perfect meal for the family.


Ingredients:
5 oz fat free evaporated milk
½ cup plain dry breadcrumbs
1 tablespoon McCormick Hamburger Seasoning
1 lb raw 95% lean ground beef
1/3 cup ketchup
2 teaspoons mustard
3 oz 50% light sharp cheddar cheese, (3/4 cup) shredded

Directions:
1.    Pre-heat the oven to 350. Lightly mist a 9” glass pie plate with cooking spray and set aside.
2.    In a large bowl, combine the evaporated milk, breadcrumbs and hamburger seasoning and mix. Add ground beef and combine thoroughly (I just use my hands). Press the meat mixture into the bottom of the prepared pie plate and bake for about 20 minutes until meat is almost browned through. Remove from the oven and drain juices.
3.    Spread ketchup across the top of the meatloaf. Squeeze the mustard back and forth across the surface of the pie in both directions, crisscrossing (I measured and this is about 2 teaspoons of mustard). Sprinkle the cheese over the top of the whole pie and place back in the oven for an additional 5 minutes until cheese is melted and meat is no longer pink.

ALEXIS Notes:  I used ground turkey (it was on sale), I couldn't find the hamburger seasoning so I used Taco seasoning I had on hand.  I shop at grocery outlet and they don't always have exactly what I need so I used a Chucky Cheese Spicy Blend that they had (added a little extra calories, but I did use turkey so maybe it balanced out?).  I also used Dijon Mustard (I admit I hate mustard and can manage only with dijon so it was all we have in the house).

Skinny Meatloaf ... Meatloaf Parmesan

Sunday Supper Time Ideas ... Oh yes I've even named it (stop shaking your head I know it's not original but it works).  This was a easy one that was so yummy!!

I saw Audrey on The Taste a while back and wanted to give one of her skinny recipes a try. I came across her Meatloaf Parmesan which looked so yummy she served with Rosemary Potatoes.  I just skipped those potatoes and made regular mashed for the boys, I just had a slice of the meatloaf myself to keep low on my calories for the day.  This was a hit with the boys and our guest.  Our guest said he never had meatloaf with cheese before and really enjoyed it!!


Meatloaf:
1 onion diced
3 cloves Garlic finely chopped
1 tbsp Olive Oil
1 LB lean ground beef
2 eggs
½ cup Parmesan or Romano cheese, or a combo of the two
¾ cup bread crumbs
2 roasted red peppers chopped
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
¼ cup Mozzarella cheese
Pre-heat oven to 350, oil (cooking spray is fine) a loaf pan and a rimmed baking sheet.
Put oil in pan, heat on med-high and add the onions cooking for 5-10 min until soft. Toss in the garlic and cook for another 5 min, remove from pan to a plate to cool. While the onions and garlic cool put everything else in a large bowl, hold the marinara and Mozzarella back though. Once the onion mix is cool add to the bowl and mix with your hands until just combined, don’t over mix it will make the meat tough. Mold into an loaf pan, top with marinara sauce.
Bake in oven for 50-60 minutes, after about an hour take out the meatloaf, top with mozzarella and put back into oven and broil at 400 for 3-5 min, watch so it doesn't burn.
Take out meatloaf and let it rest for 10 minutes. Time to plate and serve.
ALEXIS NOTES: I used pizza sauce since that is what I had on hand along with Panko bread crumbs.

Santa Fe Meatloaf - $5 Meals

Here is another $5 meal we tried out, well I should say the boys tried it out (I'm not allowed well everything but the meat in this recipe).  But it sure did smell amazing and the boys love meatloaf so it was a winner with them.  Served with some veggies and it was the perfect meal, mine was a little more then the $5 but as we talked yesterday with out the proper coupons also time of year and where I live makes the price flux a little bit but still an inexpensive meal. 


Today we have Santa Fe Meatloaf found on Mom's Who Think.
Ingredients:
Vegetable oil spray
1 onion, minced
1 red bell pepper, stemmed, seeded, and minced
2 tablespoons vegetable oil
4 garlic cloves, minced
1 tablespoon tomato paste
2 teaspoons minced fresh oregano or ½ teaspoon dried
2 teaspoons chili powder
1 (15-ounce) can black beans, drained and rinsed
2 slices high-quality white sandwich bread, torn into quarters
½ cup whole milk
2 pounds 85% lean ground beef
1 cup shredded cheddar cheese (4 ounces)
¾ cup frozen corn
2 large eggs
2 tablespoons minced fresh cilantro
Salt and pepper
½ cup barbecue sauce
Directions:
1. Line slow cooker with aluminum collar, then line with foil sling and coat with vegetable oil spray. Microwave onion, bell pepper, oil, garlic, tomato paste, oregano, and chili powder in bowl, stirring occasionally, until vegetables are softened, about 5 minutes.
2. Mash black beans, bread, and milk into paste in large bowl using potato masher. Mix in onion mixture, ground beef, cheddar, corn, eggs, cilantro, 1 teaspoon salt, and ½ teaspoon pepper using hands.
3. Transfer meat mixture to slow cooker and press into even layer. Brush meatloaf with ¼ cup barbecue sauce. Cover and cook until meatloaf is tender, about 4 hours on low.
4. Position oven rack 6 inches from broiler element and heat broiler. Using sling, transfer meatloaf with foil rimmed baking sheet, allowing juice to drain back into slow cooker. Press edges of foil flat, brush meatloaf with remaining ¼ cup barbecue sauce, and broil until caramelized, about 5 minutes. Let cool for 15 minutes before serving.

Tuesday Friends with Light Comfort Foods

Well I’m back to my normal schedule which is good for my sleep lol.  The extra hours I worked will help us get over the hump.  I will miss the extra hours but it’s a good move what my boss did.  Of course this crazy person had a minor freak out when I first noticed what happened but all is good.  Have I mentioned I have a slight abandonment issue? LOL, so my weeks won’t be a long and crazy and as always I know the Lord will provide until we work at all the changes with Rick’s new job.

We had a great Tuesday night dinner at our house this week.  I have not one but two friends from High School come by for dinner!  One friend had never had ground turkey so I of course had to find a recipe for her to try it out.  Meatloaf is always a hit with the boys so I found this recipe from the Hungry Girls’s Crazy Good Turkey Taco Meatloaf.  It was cheesy and good all wrapped into one!  The whole pan was gone before I could say another word (I did put one a side for Rick).

Next on the request list was for Mac and Cheese, I wanted to find  a healthy version.  This recipe called for winter squash but all I could find was butternut squash which I’ve used before in a mac and cheese so I took a gamble and made it again.  This Macaroni and 4 Cheeses off the food network and it turned out wonderful!

Another Boy Pleaser Meal

As you all know by now the boys are all about the meat and potato dishes.  My challenge is finding ways to make it healthier sider.  So I share with you another meatloaf and mashed potato dish.  Both of these were rather simple to make and both boys went back for seconds, Cole even had thirds!

First off is a Skinny Turkey-Spinach Meat Loaf now I did all ground turkey since I had it on hand and no one here seems to mind it.  PLUS I was able to sneak in spinach, which in this house is not that hard except for Rick … lol.

Next on the list was Skinny Garlic Mashed Potatoes from my favorite site Skinnytaste.com.  These were simple to make and the boys of course loved them.  Another simple one but a crowd pleaser!

Yet another Meatloaf & Potato (but Skinny Style)

As you may have guessed meatloaf is HUGE in this house.  Now to find new recipes is my mission.  PLUS to switch out turkey for ground beef is a huge thing for me.  I found a new website I love that for you weight watcher people she list the point value.  The first recipe I tried of hers is the Barbecue Turkey Meatloaf.  The boys loved it and no complaints on it being turkey.

Twist on Meatloaf & Potato

Last Tuesday due to the snow our Tuesday night dinner friends didn’t make it but I still made up our dinner that was planned.  It was actually good it was just us due to the boys liked this meal so much they ate it all! Cole told me I was the best cook and I need to be on one of the cooking shows I watch … ahh!  Than Caden told me I was a “Cool as Grave Digger” we recently went to Monster Jam …. LOL.  Thank you again to Pinterest you make my meal planning easy!!  When growing up Meatloaf & twiced baked potatoes where something my mom would make all the time.  I love to bring things from my childhood but with out all the calories.  Here are some great twist of family favorites that won’t bust your pants.

I made the meatloaf with ground turkey due to that was on sale the other day and I stocked up!  I found this Chicken Parmesan Meatloaf and I think I may have to make it again soon!

Where’s the Beef MOM?

Rick has been complaining we have been having too much chicken and wanted some beef.  So I picked up some lean ground beef and away I went!!  I pulled out some ground beef and decided I’d make it for tonight’s so I made the dinner and then prepped the next day, now that was a breeze I may have to do that more often!

First on our list was Cheesy Meat Loaf Minis Weight Watchers PointsPlus 7.  I found this new website Nutmeg Notebook that is an amazing site with low calorie meals that are to die for and if you’re doing weight watchers she post the points also.

Small little Portions …

I made the best little meatloaf cupcakes and zucchini bread cupcakes both were hits here and the cupcakes again got rave reviews at the women’s group with request for the recipe!  Got to love that!!

First off are the Mini Cheesy Meatloaves were so amazing with a little cheesy surprise!

And for the Amazing zucchini bread I made bread and cupcakes.  And does it EVER live up to it’s name!!!  It was packed with flavor, now the dough isn’t the prettiest but man I will be making this from now on.  It was a perfect balance of zucchini, pumpkin and craisins.

Happy Tuesday everyone!!!  I’m starting to feel a bit better but my tummy is still revolting against me … ugh.  Thank you for all your prayers the Monday regular babysitter was back.  The boys did so MUCH better not a bunch of noise, the teacher was up playing with them.  I’m so glad I don’t have to hid under a rock again … Tomorrow I’ll explain what happened again with a babysitter .. lol.

It’s a Lean Meat & Blueberry thing :)

It was a crazy week last week, well I should say it’s been like that since School has started.  I feel a little like I’ve lost my hold on things lately.  I’m hoping that I’ll get back in the swing of things.  I did good on our meals at least and that is what I’m holding on to that small achievement, we won’t speak about the exercise and/or the candy … ugh!

First off I found this Baked Rigatoni with Beef that was so easy to make and was absolutely filling and yummy!

Next off I’ve made a version of these before but Skinnytaste.com posted a new recipe and I had to make them for our Tuesday Night Dinner guest.  These Skinny Meatloaf Cupcakes with Mashed Potato Frosting, she posted her’s in a aluminum cupcake holder.  I used these thin paper ones that didn’t hold up well so it wasn’t as pretty but they were amazing going down.

Pasta, Meatloaf and Yummy Cookies

Look at me I’m trying out my new meme if you would like to play along, I sure would love to see more recipes Smile.

Well it was another busy weekend around here, and even yet again had problems using now my check. I swear I’m done with my bank and moving to a credit union, I’ve been embarrassed for the last time at a grocery store. I swear now I’m going to be paranoid when I pay for anything … ugh! Now on to the good Stuff, FOOD!!!

First on our list is Pasta with Bolognese Sauce that was a hit and very filling (as you can see I switched out to the Turkey Bacon).

I had low fat feta left and came across this very yummy recipe for Turkey, Spinach & Feta Meatloaf. As Rick said it wasn’t pretty but it was pretty good … and for Rick that is high praise … hehe Smile.

The church ladies asked me if I would make some cookies for the new comers to church (first visit you leave your address they bring cookies). I came across this recipe for Soft Oatmeal Cookies, that were so yummy and I was happy to get them right out of the house so I didn’t eat them all. 5 batches and my good deed was done Smile.

<p>I volunteer to make cookies for the new people who visit at church. I found oatmeal are the easiest to make and make the <span class="caps">BIG</span> cookies they like to pass out. This was a perfect recipe, my kitchen smelled so good.</p>
