As you've seen I'm in love with a new series of books by Gail Fraiser, set in a town called Lumby. It's the best series I've read in a long time. And you all know how much I love to cook so you add in recipes in the back of the book and I'm hooked! Now I'm sad to say I've read all the books and sitting on the edge of my seat waiting for the next installment. From the book
The Promise of Lumby.
Chicken and Artichoke Chili
Chicken and Artichoke Chili
4 tbs olive oil
2 lbs boneless, skinless chicken breasts, cubed
1 c chopped onion
4 garlic cloves, minced
2 c vegetable broth
2 14 oz cans artichokes, drained, patted dry and loosely chopped
2 tsp parsley
2 19 oz cans cannellini beans, not drained
salt and pepper
Asiago cheese, grated
1 baguette
In a large 3-quart saucepan, heat 2 tbs of olive oil over medium-heat. Add chicken and cook about 5 minutes stirring often. Remove chicken and set aside. Add remaining 2 tbs of oil and reheat pan. Add onion and cook for 2 minutes over medium heat, and then ad garlic and cook for another 2 minutes. When onion is tender, stir in vegetable broth, artichokes and parsley. Reduce heat and simmer for 10 minutes. Stir in cooked chicken and beans and simmer for another 20 minutes. Add salt and pepper to taste. Garnish by sprinkling grated Asiago cheese on top, and serve with warm baguette. Makes 6 to 8 servings.
ALEXIS NOTES: I really like chicken so I used around 3 lbs of chicken. I only had chicken broth so I used that. My cans of cannellini beans wasn't that big so I went with 3 to give it the right amount. I also skipped on the cheese one because I was being cheap and 2 cutting on calories. Also no baguette's here :). I had a bowl and took the rest to the neighbors they gave it two thumbs up like I did.

when i first saw the title.. i was all.. Mmm, not sure about that.. then i told myself to NOT be a child- so yep! bet it would be good!
