Merry Christmas

Hope you all had a very Merry Christmas! We had a great low key two days.  I worked just a little bit on Christmas Eve, due to I lost my voice and since a good part of my job is calling people it just didn't work out ... lol.  We stopped by my parents house to exchange gifts an went to our first Christmas Eve Candle Light Service.  Santa parachuted down from the ceiling and our Pastor told a funny Christmas Eve Story he made up about our city.

Christmas Day we opened gifts, then off to the movies we went.  We started this tradition last year and I hope we can keep doing it every year.  This year we went to see Walking with Dinosaurs, the boys enjoyed it ... me not so much lol I fell asleep.  We ended our night with a simple dinner and then we loaded up in the car for Fantasy lights!  It was a perfect way to end Christmas!

Merry Christmas Eve ... Perfect Pumpkin Pie

Hi Everyone I know you're crazy busy so I thought I'd just throw up a quick recipe!  I made this pie and it turned out so pretty I just had to share right away!  Hope you all are having a very Merry Christmas and enjoying family and friends.


I found this recipe on All Recipes for the Perfect Pumpkin Pie, I added some leaves and a pumpkin to dress it up.  I got a Paula Deen pie kit and had to try them out.


INGREDIENTS:
1 (15 ounce) can pumpkin
1 (14 ounce) can EAGLE BRAND®
Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust
DIRECTIONS:
1.Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
2.Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.


I took a second pie crust and used it to cut out my leaves and the pumpkin to dress the pie up.  I just attached them with a little water and then when I cooked I used my pampered chef pie shield.  If you don't have one they are cheap and a good investment if you make pies and don't want  burnt crust.  Also I usually make my crust but I was in a pinch so the froze did just fine.
