Rudolph the Red Nose Reindeer "Peanut Butter Fudge"

We were invited to Christmas party this past weekend and I was able to try out a bunch of fun things I've found on Pinterest.  This is one that didn't make it to the party due to my Peanut Butter Fudge didn't set up so I thought I'd show this one first!  

I started with my Microwave Peanut Butter Fudge recipe I posted last December.  This is a simple one to make and my MIL has actually requested that I make it and send it as her gift again this year!



Ingredients

1cup of butter
1cup peanut butter
1tsp vanilla extract
1lb powdered sugar

Directions

Prepare a pan by covering it in wax paper and spraying with nonstick cooking spray, leaving at least one inch overhang of wax paper around all edges. You can use an 8×11” baking sheet with a one inch rim or an 8×8” square pan if you want thicker fudge.
In a microwave safe bowl, combine butter and peanut butter. Microwave on high two minutes, stir and microwave two additional minutes. Stir in vanilla and powdered sugar. Mix with a wooden spoon until well combined and smooth. Pour into prepared pan, smooth, and cover with another sheet of wax paper pressed directly against the surface of the fudge. Refrigerate at least two hours and cut into one inch squares.


NOW I made my fudge in my Cornbread Silicone pan, if you do not have one of these make in a circle and then cut like a pie to get triangles.  I say invest in one of these pans if you don't already have one!  I found this idea on Mom Lid Musings.


For the Reindeer:

Peanut Butter Fudge (in a triangle shape)
Ribbon
Googly Eyes
Red Pom Poms (or red dots)
Plastic Bags (Or ziplock and cut the top off)
Glue

Take your fudge put it in a plastic bag.  I took some tape before I added the ribbon to make sure the bag would stay closed.  I took my Elmer glue stick and added some googly eyes and then added a red pom pom for a nose.  Tada all done!  The longest part of this was waiting the 2 hours for the fudge to sit up.

Another week of Christmas Movies ...

I have more Christmas Movies that I have to share with you all!  I hope you find one you may want to watch or one you never heard about!



Love at the Christmas Table (Lifetime) - This was an ok movie, Usually you know me I love all Christmas movies but this one kind of dragged on in parts.  About a boy and a girl that come together every Christmas.  If your a The Wonder Years Fan you'll love this has the actress that played Winnie Cooper.  If you have spare time and want a holiday movie it could be your answer :).


Hitched for the Holiday's (Hallmark) - I'm a sucker for Joey Lawrence and he was cute in this movie.  We've seen this theme before but it was a cute movie about not being lonely at the holidays plus the pressure of family and with someone for the holidays.



The Heart of Christmas - gmc TV - I'm so loving this new channel I found if you can get it I suggest you do!  It made me cry and really shows you the true meaning of faith.  It was nice to see this mom who blogged about her sick child that touched so many lives.  This is a true story. It may be hard for some to watch, but I truly found it to be a movie that was moving and heartfelt.  My heart goes out to families with sick children and my prayers are always with them.  If you can give to St. Jude's Hospital, they help so many!

 
A Bride for Christmas | Hallmark Channel - This was a cute movie with a theme we have seen before with a bet about a girl.  But it all turns out to be the right move all.  Very cute movie!

Christmas with a Capital C gmc TV  - This is a GREAT movie about the true meaning of Christmas! The movie is from a great Christian song from the same title.  On my NEW favorite station GMC, check it out if you have not yet!! What we make it and how we treat others.  I like a moment in their where the pastor talks about statues being like idols instead of what they are meant to be.  It was heartfelt and a real tear jerk-er   Just remember you may not always know what is going on with others around you!

Miracle of the Cards | gmc TV - This True story brought me to tears about a little boy with a brain tumor I think I even remember this chain letter to send letters for him to break the Guinness world record.  What a great story of faith and the motivation of a mother to bring strength to her son!

Finding MrsClaus - Lifetime -  This was a funny take on Mrs. Claus feels a little left out she hits Las Vegas to help a little girl find a husband for her mom.  It has some cute moments and a story I haven't seen before.  It won't make you cry but it will make you laugh.

Christmas Snow | gmc – uplifting ... - Now this is a tear Jerk-er towards the end.  The scrooge Chief gets a special guest who turns out to be a special angel sent to her to make things right in her life.  Great life lessons and making the best of life and learning the meaning of Christmas.

Christmas Box |  gmc TV - A movie that leads a family that is being torn apart by putting business before family.  Moving in with a elderly woman that teaches them that they need to be more about family.  Along the way she teaches the all business day to slow down and the true meaning of Christmas.  Yes you may cry a little at this one.

Jingle and Bell's Christmas Star | Hallmark Channel - And one last one for the kids!  If you have been seeing the Hallmark ads for their book with Jingle who barks during the book you will know this little guy Jingle.  The boys really enjoyed this one.  I'm not much one for animated animals all the time but this sure was cute!

Early Christmas Gift!!!

A quick post still fighting this stupid cold :(.  I did get a early Christmas Gift, most people don't like things for the home but I've been dying to get a new vacuum cleaner.  Black Friday had some killer deals on Dyson's and Rick got me one.  We weren't going to do gifts for us due to the car situation (along with my car just went into the shop for $250 repairs).  But he was very sweet and has been planning on getting me one for sometime and couldn't pass up the deal.  

It arrived yesterday and he gave it to me.  With the boys I'm constantly trying to keep the house clean.  I swear these boys can never make food in their months.  I'm always trying to keep up on it but I must say I'm not as good as I should be.  My old vacuum I think has sucked up too many Lego's and was barely sucking up anything.  I swear more came out then went in.  So I tried out my new vacuum and thought it was great and cleaning up all the area's in the house.  I'm one pleased mama with my new Dyson.  PLUS it has a lifetime guarantee on the filters which my old one that is ONLY 2 years old no one cares them any more!!

Back to my tea and trying to get rid of this head cold!!

Nation Cookie Day .... Santa Surprise Cookies

Did you know today 12/4 was national cookie day?  YUP I didn't know that either until Facebook said something.  OH yes you got to love Facebook!  Well I just happened to make cookies so check me out!  A very sweet mom at the boys school who offered up a spare car for us to drive (which then turned out not to pass emissions and needs some work and her husband is working to get it up and running for us) offered to pick up kids when Rick takes my car.  She picked them up once last week and then today, so I wanted to make her some cookies.  I'm still feeling crappy so I wanted something quick, so I went to a cookie I had at a cookie exchange at my old job called Santa Cookies.

I did this very simple you can make your own sugar cookie base, I didn't feel up to making a batch from scratch so I went to my Betty Crocker Sugar Cookie mix.

Ingredients:
Betty Crocker Sugar Cookie Mix (you can make sugar cookie base)
(Cookie Mix calls for Egg & Butter)
Mini Candy Bars (cut in half)

Make your Sugar cookie mix.  Then cut the mini candy bar in half (I tired using a full mini candy bar and it was just too big.  This is a great way to use up that Halloween Candy you have in the house.  Take a ball of sugar cookie, add half the mini candy bar and roll the cookie dough around the candy bar to make a round ball with a surprise in the center!  Bake at 350 for 10 minutes (the bag says 7-9 minutes but I found it had to cook a little longer with the candy in the middle).  Serve warm and you get a yummy gooey surprise.  Enjoy!!

Green Chili Chicken Burrito's

Just a quick post, this cough has now headed to my head and I think I may die soon but I have a full day of work to do.  The ONLY bad thing about working from home I'm a contractor so no sick days for this girl, one pay check coming in means no days off or Bills don't get paid.  Rick requested I make this last night for his friend and him.  NOW I was not feeling well so the picture was not all pretty like I normally would make it so no comments about how it looks please :).  According to him and his friend it was the BOMB.  I've posted this recipe about 2 years ago but today I made it a little different and it was a hit (yes I made it the lazy way last night and mixed everything together).

Ingredients:
4 or 5 Chicken Breast
1 can of Beer
1 can of Cream of Mushroom
1 LARGE can of green enchilada sauce
1 can of green chillies
1 LARGE container of Sour Cream
2 Cups of Cheddar Cheese
6 or 8 Tortilla

Preheat oven to 350. On stove cook the chicken in the can of beer, until cooked threw. In a large bowl add the Cream of Mushroom, Green Enchilada Sauce, Green Chillies, Sour Cream and Cheese. I call this the "goop" mix it well and set aside while chicken cooks. When chicken done you can cut into strips or I like to shred it's easier :). Lay out a tortilla, add a large scoop of the "goop" and top with chicken. Most days I roll nicely like and tuck in the edges or if in a hurry like this night I just roll them up. The true tuck insides and roll is the best easier to serve. Depending on how much chicken you use will determine the amount of tortilla's you need to use. Once all wrapped up use the last of the goop to top and put in the oven for 35 - 40 minutes, until brown and the cheese in the goop is melted. Cool and serve.

**Alexis's LAZY version mix the goop with the chicken.  Add the chicken goop to the Tortilla, roll up and put in a glass dish.  I then had the extra chicken goop that I added to the top of the tortilla and added another cup of cheddar cheese. **

Coughing ... Has Invaded the house

OH no the coughing has invaded my house, Rick has been coughing for a few days and then the boys started.  And then last night it started my scratchy throat!  I thought I was going to make it threw this with no cough but I think it has taken hold of me!  UGH I can no longer complain to Rick to stop coughing.  I hope that I don't get fully sick I really can't afford taking time off work.  Sorry a short post to keep it simple.
