Coconut Milk Cupcakes

For the fun Eric Carle Cupcakes I showed you yesterday I had to first make the cupcakes.  I have this crazy thing where I can never make the same type of cupcake as before (I know I said it was crazy just deal with me).  So I looked in the pantry at what I had and saw some Coconut milk that I haven't used and thought what a GREAT idea so I hit up Google and found these Coconut Milk Cupcakes on Group Recipes.

This was a simple recipe that smelled so great and the boys said where very yummy!


Ingredients

3/4 cup unsalted butter, room temperature
1 1/4 cups sugar
3 eggs, room temperature
1 cup canned coconut milk
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon kosher salt
1 teaspoon baking powder
1/2 to 3/4 cup sweetened coconut


Preheat oven to 350 degrees F.
Cream the butter until light and fluffy.
Add sugar and cream again until light and fluffy, scraping down sides of the bowl halfway through to ensure even mixing.
Add eggs, one at a time, beating for 30 seconds after each addition.
Combine the flour salt and baking powder in a bowl.
In another bowl place coconut milk and vanilla.
Add 1/3 of the dry ingredients and mix, then add 1/2 the wet ingredients.

Tuesday Dinner (Carne Asada w/ Coconut Cream Pie)

As many of you know Tuesday’s here is dinner with my friend from high school and her son.  The boys get play time and we get time to sit and chat about our week or the husbands Smile.  Last week I made my first Carne Asada and Coconut Cream Pie.  I know two first time recipes, believe me this situation has not ALWAYS worked in my favor.  Just ask Rick we have had to scrap the meal and pick something up, I’m glad to say this wasn’t the case with this meal.  The dinner was delicious the only thing that happened is the kids left more cheese on my floor then in their bellies … hehe

First on the menu was Carne Asada Marinade that we then put on whole wheat flour tortilla’s.   The marinade was to make and my favorite was it was made the night before and then the next night I was able to throw it on my indoor grill.

Now onto the yummy recipe I made with my Gold Label Virgin Coconut Oil Certified Organic. I couldn't resist a pumpkin coconut recipe! I wish I had the coconut flour I know it would have made these pop even more then they do but believe me they were yummy just the way they were! Meet my new best friend Coconut Oil :).

Pumpkin-Coconut Squares

Procedure:

Pre-heat oven at 350 degree F.

Mix the coconut flour with baking powder. Set aside. Blend all the rest of the ingredients and then mix with the coconut flour and baking powder mixture. Mix well. Grease an 8 x12 rectangular pan with coconut oil. Pour the mixture on the pan.

Bake at 350 degree F for 45 minutes.

Test to see if it is already done by inserting a clean toothpick in the middle. When the toothpick comes out clean or with no residue, the mixture is done.

Cool down. Cut into squares.
