My amazing friend Kristie at Kristie's Notes featured this amazing quiche I couldn't wait to try. Really I went out the next day and bought all the stuff I needed. Everyone had seconds, I couldn't get over how fast it went. I barely had enough to give to Rick for his dinner when he got home. Poor guy for working late all the time, he's dinner is usually in the microwave waiting for him to reheat it. Sorry dude, but this was super yummy and he actually ate the whole thing, rare for him. He usually is sneaking in a piece of coconut cake at night time. Don't even get me started he only like the one from Wal-Mart, yup I know he sucks! LOL, so check it out!!!
Brown the Meat
Add Taco Seasoning
Beat up the eggs
Put onions on the bottom of pie crust
Add Taco Meat
Beat up the eggs
Put onions on the bottom of pie crust
Add Taco Meat
Add Salsa to eggs
Add Salt to egg mixture
Add Pepper to Egg Mixture
Add Milk to egg mixture
Add Cheese to meat and onions
Pour egg mixture of meat mixture
Put in oven! Note I'm out of tin foil, you should have this around edge so it doesn't get brown like mine.
400 for 35 minutes
Look at that doesn't that look flipping good!
I had some leftover taco meat and cheese and I was feeling a little creative after making my first quiche a couple weeks back. I came up with the following recipe with my leftovers.
Taco Quiche
1 pastry shell
1 cup taco meat
1 cup taco/Mexican cheese
1/4 cup chopped onion
3 eggs
1/4 cup salsa
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion salt
1 cup taco meat

1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion salt
Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400 degrees for 5 minutes. Remove foil; bake 5 minutes longer.Place taco meat, cheese and onion in the bottom of the pastry shell. In a bowl, whisk eggs, salsa, milk, salt and pepper. Pour into shell. Sprinkle onion salt over top of quiche. Cover edges with foil and bake at 400 degrees for 35-40 minutes or until knife inserted in center comes out clean. Let stand 5-10 minutes before cutting. Yield: 6 servings.
