P.S. Did I mention they won a blue ribbon ... LOL as usual I can't take the credit on a recipe but I sure love making them! People like Chef E can make these things up out of their heads and I'm the person that loves taking their recipes and making them. With out more words which I'm not known for (yup not sarcasm either)!
Editor Note this recipe was for 2 casseroles so I made it for just one casserole.
Spicy Nacho Bake
Ingredients:
1 pound ground beef
1 large onion, chopped
1 large green pepper, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (15-1/2 ounces) hot chili beans
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) whole kernel corn, drained
1 can (8 ounces) tomato sauce
1 envelope taco seasoning
1 package (13 ounces) spicy nacho tortilla chips
2 cups shredded cheddar cheese
Directions: In a Dutch oven or large kettle, cook the beef, onions and green peppers over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes (mixture will be thin). In each a greased 13-in. x 9-in. baking dish, layer chips and 1/2 meat mixture. Repeat layers. Top each with a layer of chips and cheese. Bake, uncovered, at 350° for 20-25 minutes or until golden brown. Yield: 1 casseroles
