I love the crock pot and need to get back into the groove of using it because it helps out to put it in there and let it do it’s thing then I can run to the gym and have dinner ready to go when I come home. I made a weight watcher taco soup (with a few modifications, due to what I had in the house) and a cornbread muffin that also was very yummy!
Here is the Weight Watcher Taco Soup original recipe. I didn’t have kidney beans so I used black beans. Only 1 can of pinto so I slipped in a white bean sub. And extra lean ground beef.
Then I had to of course had a muffin and I found this weight watcher corn muffin recipe that was very yummy. I did add 2 packets of Splenda .

So what is our your menu tonight?
Perfect for back to school!!! Going to have to try that this week. Tonight is mushroom ravioli with sausage and vodka sauce. Mmmm!

I'm actually using the crockpot tonight too! I use it more and more as fall moves in. :) That taco soup looks like my future meal.

ReplyDeleteI bought my crockpot at a garage sale 2 years ago for 50 cents. It is wonderful, especially for beans. I cooked great white northern beans in turkey broth from Christmas (I had frozen it) with celery, carrots, onions, garlic, sage, basil and smoked sausage (Kielbasa).

We will be having that with brown rice,focaccia, romaine lettuce salad with a simple vinaigrette.
