I tried Spicy Thai Fried Rice, that even the boys loved. It was so amazing how fast Caden ate this up! It was full of flavor and spice and just the right of both. You can even go to their website and search Recipes for dinner. As you all know I'm always running around trying to make dinner. So I search the internet and then read it off and make it as I go. I love a site that makes it easy for you to get dinner on the table. I even went to Wallyworld and checked out the prices on their ingredients and was so suprised at how the price was so in my budget. Yup I can so do this!
I made the Spicy Thai Fried Rice that took me like 20 minutes to make! As you know my moto quick, easy and taste good (add in budget friendly) and you have a winner in my book!
Spicy Thai Fried Rice (Khao Pad Goong)
The perfect treat for those who like their rice hot and spicy!
2 Tbs. vegetable oil (divided)
1 egg, beaten well
1 small yellow onion, chopped
1 clove garlic, finely minced
1⁄2 tsp. salt
1 tsp. brown sugar
3 cups cooked Thai Kitchen Select Harvest Jasmine Rice* (cooled at least 1 hour or leftover rice that has been refrigerated overnight)
2 Tbs. (or more) Thai Kitchen Spicy Thai Chili Sauce
1 Tbs. Thai Kitchen Premium Fish Sauce
1⁄2 cup mixed vegetables (try diced red bell peppers, asparagus, or frozen peas)
Optional: 1⁄4 lb. cooked small shrimp, shelled and deveined, or firm tofu, strained and cubed
Add 1 Tbs. vegetable oil to a large skillet or wok, swirling to coat the pan. Heat over a medium high flame, add the egg and cook until well scrambled. Remove egg and set aside.
Add remaining 1 Tbs. oil to the wok. Over medium high heat, stir-fry the onion, garlic, salt and brown sugar for 3 to 5 minutes, until the onion and garlic have just turned golden. Add cooked jasmine rice, spicy Thai chili sauce, fish sauce, vegetables and egg (and optional shrimp or tofu), stir-frying to combine. Stir-fry for an additional 2 to 3 minutes until all ingredients are cooked. Serve hot with more Thai Kitchen Spicy Thai Chili Sauce on the side for those who like added heat. Serves 2.

Garlic lovers, here’s your dish! Takes just a few minutes to prepare, for a simple and delicious stir-fry. Spear with toothpicks for an appetizer, or serve over jasmine rice as an entrĂ©e.
8-12 large shrimp (shelled and deveined)
2 Tbs. garlic, minced
1⁄2 Tbs. Thai Kitchen Premium Fish Sauce
1 tsp. pepper
1 1⁄4 tsp. sugar
4 Tbs. vegetable oil
4 sprigs of green onions, chopped
1 tsp. fresh ginger, thinly sliced
Optional garnish: sprigs of fresh cilantro
In a bowl, mix together shrimp, garlic, fish sauce, pepper and sugar. In a wok or skillet, heat oil over high heat until oil is hot. Add shrimp mixture into wok and stir-fry quickly until shrimp turn orange-pink in color, about 1-2 minutes. Add green onions and ginger. Stir-fry for an additional 30 seconds. Serve topped with fresh cilantro. Serves 2 to 3.

ReplyDeletePad Thai Noodles - Traditional Style
Sweet, sour and salty tastes all blend and balance in this traditional Thai favorite. The fruity-sour taste of tamarind is almost impossible to duplicate, and is worth searching for in Asian or Indian markets.
1 pkg. (7 oz.) Thai Kitchen Stir-Fry Rice Noodles*
1⁄4 cup tamarind juice
1 1⁄2 Tbs. Thai Kitchen Premium Fish Sauce
1 Tbs. rice vinegar
1 Tbs. sugar
1⁄2 tsp. paprika (optional)
2 Tbs. vegetable oil
1 Tbs. garlic, minced
6 shrimp, shelled and deveined
2 oz. tofu, cubed
1 egg, lightly beaten
1⁄2 cup bean sprouts
1⁄4 cup unsalted peanuts, crushed
Optional garnishes: sprigs of fresh cilantro and lime wedges
Soak rice noodles in cold water for at least 1 hour (noodles can be soaked longer and even over night). Drain and set aside.
In a bowl, combine tamarind juice, fish sauce, rice vinegar, sugar, and paprika. Set aside. Heat oil in a wok, add garlic. Sauté for 30 seconds until garlic is fragrant. Add shrimp, tofu and egg. Stir-fry for 1 minute, until egg is scrambled. Add rice noodles and tamarind juice mixture. Stir-fry all ingredients until well cooked and combined. Serve with bean sprouts on the side, peanuts sprinkled over the top, with fresh cilantro and lime wedge garnishes. Serves 4.
