I wanted to make some cookies for the boys to have as a special treat. I have a bunch of sprinkles left over from God knows what so why not give a try these Funfetti Cake Batter Cookies I found on Six Sister's Stuff. But of course I didn't want to use a box cake mix, why not make my own! I found a Homemade Yellow Cake Mix on Chickens in the Road.
NOW the homemade cake mix worked awesome, I know this because I used it for the cupcakes I made for the Spring Fling that I spoke about yesterday. BUT when used in the recipe for cookies it didn't turn out so well!! It was very soupy so I had to add more flour and it was just a mess! I did power threw and tried to make the cookies, we got a total of 3 COOKIES that turned out ... lol. The boys ate them and loved them and hey I don't have a house full of cookies!
A hit Homemade Yellow Cake Mix (you can put in Ziplock and store for months or do like I do and make it on the fly).
A miss Funfetti Cake Batter Cookies - I may have to break down and try it with a real box mix! :(
Homemade Yellow Cake Mix:
(This is the standard size mix for recipes calling for an 18.25 ounce mix.)
2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
1/2 cup non-fat dry milk
1 1/2 cups sugar
1 tablespoon baking powder
1/2 cup non-fat dry milk
Combine flour, sugar, baking powder, and non-fat dry milk.
Store or if you want to make it right then:
Place Homemade Yellow Cake Mix in a bowl. Add water, vanilla, butter, and eggs. Combine with an electric mixer then beat two more minutes. Pour into a greased and floured cake pan. Bake at 350-degrees.

Funfetti Cake Batter Cookies
Ingredients:
1 box Funfetti cake mix, 18.25 oz
1 teaspoon baking powder
2 eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup color sprinkles
Directions
Preheat oven to 350 degrees. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet.

Bake for 8 to 10 minutes. Allow to cool for about 5 minutes on the cookie sheet before transferring to cooling rack. They will be very soft at first but will harden as they cool even more.
Makes 2 to 3 dozen

I hate when recipes don't work out. I made some cookies last night and they were a total flop. The "dough" was more like graham cracker ground up lol. No good it all went in the trash. But like you said I don't have the temptation in the house lol
